The texture is soft and pleasantly chewy, reminiscent of the classic German Lebkuchen. They stay tender for days and actually improve as they rest, developing an even deeper, more luxurious chew. (If you manage to keep them that long – they tend to disappear quickly!) For extra freshness, you can place a slice of apple in the container to help retain moisture.

I just stumbled across this recipe and your blog, and these cookies are on my list for next month! I do have two questions: 1) do you use/recommend dark blackstrap molasses, or light molasses? (I don’t know what “fancy molasses” is! Molasses is something I virtually always have in my cupboard but almost never use.) 2) Do you know how well these freeze? I’d like to make them a few weeks in advance and freeze them until the holiday, if I can. They look and sound delicious! And even if no one else enjoys them — which I cannot imagine — I am absolutely certain that my house will smell heavenly when I make them!

To answer your questions:
Molasses: In Canada, fancy molasses is the lighter type, so light molasses will be the closest substitution. If you prefer a deeper, more robust flavour, you can certainly use dark or blackstrap molasses – just reduce the amount slightly, as it’s much stronger.
Freezing: I rarely freeze baked goods myself, so I wouldn’t call myself an expert, but in my experience gingerbread-style cookies generally freeze very well. My only concern here is the glaze, as freezing and thawing can sometimes affect its texture or appearance (for example, making it look a bit watery or dull). For the best result, I would freeze the cookies without the glaze and then glaze them after thawing, on the day you plan to serve them.
These cookies also keep surprisingly well at room temperature. They stay soft for quite a while in an airtight container, and I once learned a small trick: adding a couple of apple slices to the container – somehow it keeps the cookies from drying out too quickly.
