Hello everyone – I hope you are doing well! So am I, thanks for asking.

But it’s quite a long and busy week for me, so please excuse me as I am going to keep it sweet and short today. yeah, again.

It’s soup season in our family, so I am sharing some hearty ideas. Previously I posted this Carrot Tahini Soup and Carrot Ginger Soup. Now, it’s time to utilize some beautiful sweet potatoes! Surprisingly, I have only one sweet potato soup recipe on this blog – Butternut Squash Sweet Potato Soup – even though I use this root vegetable for soup quite often. On a side note, this situation (One recipe only!) does require a serious investigation and action. Fingers crossed, more sweet potato soup recipes will appear this year!

Chunky Sweet Potato Soup

This Chunky Sweet Potato Soup is THAT good, I swear. Yes, it’s quite heavy, but this is a calorie-worthy meal. And of course, you can make it lighter (See suggestions below.)

For this recipe, I made easy broth from scratch. I simply simmered few chicken thigs for about 40 minutes, skimming the scum. Then removed the skins (If you have a dog, it will appreciate!), shredded the chicken, and combined with the remaining ingredients. Easy-peasy!

You can can simplify the process and also make the soup lighter by using good quality store-bought broth. On the other hand, it won’t deliver as much of protein as it would with real chicken.

I also cooked and added a couple of Italian sausages for the added flavour. While sausages go so well with sweet potatoes and sage, they are also high in calories and fats. Feel free to skip this step, if prefer a healthier version.

Ingredients

  • 2-3 chicken thigs with skins

  • 8 cups water

  • 1 onion, thinly sliced

  • 2-4 garlic cloves, minced

  • 2 tbsp. olive oil

  • 2 medium carrots, sliced

  • 3-4 small-medium sweet potatoes (~1 1/2 to 2 lb.), peeled and cubed

  • 1-2 bay leaves

  • 1 tsp. dried sage

  • 1 tsp. fresh thyme

  • ~1/2 – 2/3 tsp. salt

  • 1 tsp. smoked paprika

  • 1/4 to 1/2 tsp. chipotle powder

  • 2-3 Italian sausages, optional

  • fresh herbs, for garnish

Directions

  • Fill a large pot with water and place chicken thighs in the pot. Bring to a boil, then reduce heat and simmer, skimming the scum, until the meat falls from the bone, about 40-45 minutes. Remove chicken, discards the skins (You can add them to your dog’s dinner bowl), and shred the meat. Set aside the broth and chicken.
  • In a different pot heat the oil over low-medium heat and cook the onions and garlic, 5-7 minutes.
  • Add the carrots and sweet potatoes and slightly brown over medium heat for about 7 minutes.
  • Add the chicken broth along with the herbs and seasonings. Cover and simmer, skimming the scum, for about 15 minutes or until the sweet potatoes are almost soft. Add in the shredded chicken, and cook for another 5 minutes or so. Try and adjust the seasonings, if necessary.
  • If desired, you can serve the soup with Italian sausage. If so, cook the sausage in a pan with some oil, until cooked through, then roughly chop / slice. Garnish as desired and serve. Enjoy!
