Hello everyone. Happy Monday – I hope this new week has been treating you well so far. Did you have a nice weekend that was enough to rest up? Well, who am I kidding?! Weekends are always so short and never enough.
Anyway, I’ve got today something so good. Something that will fix your Monday blues, if that is the case.

I am a huge fan of various dips and spreads, and you can find many ideas, both savoury and sweet, on my blog. You can find them all here, and I am also listing few ideas I am sure you will like!
Baked Cheese Dip
To make this Baked Cheese Dip, you will only need a few simple ingredients such as cream cheese, shredded hard cheese, plain yogurt or sour cream, fresh thyme, smoked paprika, and chipotle powder. Just simply mix all the ingredients, transfer to an oven-safe dish and bake for about 30 minutes, until bubbly and browned on top. You can use any hard cheese of your choice that melts well, but keep in mind the saltiness; I would recommend less powerful and salty one.
You can also see that the surface is quite oily. That’s totally fine as the cheeses and yogurt release the fats that accumulate on top. Just simply stir it up a bit when serving to incorporate. It will not feel greasy or anything like that.
You can serve this dip with whatever you fancy. But since the flavours are quite pronounced (and salty), I would recommend something more neutral as a vessel – like plain crackers or baguette.

Ingredients
2/3 cup plain cream cheese, softened
~ 250 gr. shredded hard cheese – about 3 cups (You can use any hard cheese that melts well and not too salty, such as cheddar, gouda, mozzarella or the mix of cheeses)
1/2 cup plain yogurt or sour cream
1/2 fresh thyme or more, if desired
1/2 tsp. smoked paprika
1/4 tsp. chipotle powder
Directions
- Preheat oven to 375/380 degrees F.
- In a bowl combine the softened cream cheese, most of the shredded cheese (reserve about 1/2 cup for later), yogurt or sour cream, thyme, and spices.
- Transfer the mix into an oven-safe dish (dishes). Sprinkle with the reserved cheese on top.
- Bake in preheated oven for about 20 to 25 minutes, until cheese is melted and bubbly. If desired, place under the broil for 1-2 minutes for a nice brown top.
- Remove from oven and serve immediately, while still hot and bubbly. if desired, sprinkle with some extra fresh thyme or other herbs.
