Well, my friends, do we really need a reason for a little celebration? Or let’s say, do we really need a solid reason to eat ice cream? I don’t.

Indeed, there’s a fantastic occasion to celebrate. This is my third recipe I’m posting this week. Besides, this is the second week when insane Ben decided to have such an experiment. Thus, I’m officially discharged from this two-week long challenge. I feel I need something stronger than ice cream.

I’ve got another statement to make. If you think I’ve come up with these flavors, I regret to upset you. Two years ago I was googling the perfect pairings to lavender, and Google said I should try this one. And you know what? It didn’t lie to me! I made marshmallows with this flavor (sorry, there’s no recipe on the blog), then I made ice cream which didn’t get on the blog.

Today I’m excited to post the recipe for this Earl Grey Lavender Ice Cream here. It has truly whimsical flavors – distinctive tea flavor and a lighter floral in the background.

There’s only one thing I should advise you. Due to the amount of liquid, this ice cream melts pretty fast (You can see this in the pictures). However, It’s so delightful that I believe you won’t face this issue because it also disappears fast from a bowl :)

This delicious Earl Grey Lavender Ice Cream has a refreshing and sophisticated flavor of tea and lavender.

Ingredients

  • 2 cups (450 ml.) heavy (whipping or 35%) cream

  • 1/2 cup (120 ml.) whole milk

  • 2/3 cup (160 ml.) very strong earl grey tea with lavender – about 3 tbsp. tea and 1 to 2 tbsp. dried lavender buds

  • 5 egg yolks

  • 1/3 cup (113 gr.) honey

  • 2 tbsp. (25 gr.) granulated or light-golden sugar

  • a pinch of salt

  • 1 tsp. vanilla extract

  • 50 gr. chopped white chocolate, optional

Directions

  • First of all, steep tea. In a small bowl/saucepan, put the tea leaves and lavender buds. Add about 2/3 cup hot but not boiling water. Cover and let stand for about 30 minutes. Then sieve and discard the tea and lavender.
  • Using a medium saucepan, add the heavy cream and milk; stir until well combined.
  • Place over medium-low heat and bring to a simmer, stirring occasionally.
  • Meanwhile, using a separate heat-proof bowl, whisk together the egg yolks with the honey, sugar, and salt. Add about 1/2 cup of the brewed tea.
  • Once the cream and milk mixture begins to simmer, pour half into the bowl with the eggs, whisking vigorously while you pour to prevent eggs from scrambling (this method is called “tempering”).
  • Once the custard mixture has thickened, remove from heat and add the vanilla extract; stir until well combined.
  • Pour the mixture through a fine-mesh strainer (Just in cases there’s any small pieces of cooked egg) into a container. Cover with plastic wrap, pressing the plastic directly onto the surface of the mixture, and refrigerate for at least 4 hours or preferably overnight.
  • Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s directions. It usually takes around 25 minutes. When ice cream is almost done churning, add the chopped white chocolate
  • Transfer ice cream into a freezer-safe container and place in the freezer for at least 2 hours to harden.

  1. Yeah for completing 3 posts per week project. I am glad you have done it successfully. I would surely be waiting for your next project in November. I have to confess that I have not tried this earl grey tea and lavender combo. But I am very sure I am going to love this. I would also love to see that marshmallow recipe you haven’t posted yet. Melting ice cream too fast is not an issue for me because I won’t mind licking the bowl or one filled with this beautiful combination. :)

  5. Melty melty home made ice-cream is the best!! And these are amazingly refreshing flavors! I must say, a little mature for my taste.. I haven’t really graduated from chocolate, peanut butter , cookies and M & M’s. But I need to grow up and try this sophisticated Ice-cream!!

  6. So I can actually see how Earl Grey tea and lavender go together. Yes, I admitted it. A lavender dish (besides cookies!) that I actually want to try. Haha! Just kidding, Ben. Seriously, though, this ice cream sounds amazing. I haven’t made ice cream in quite some time, and I should pull that ice cream maker out of the pantry. Steeping the cream in tea is such a fun way to bring another layer of flavor to desserts. If this hasn’t completed melted yet, you can send any leftovers to me. I’ll give you my honest opinion! :-)
