Lilac Sugar Shortbread Cookies (No Mixer and No Chill Recipe)

Hey folks!

This week, I’m continuing with a few floral-inspired recipes, and this one is especially charming. It takes a classic shortbread base and gives it a delicate seasonal twist, while still keeping everything simple and approachable. So, let’s dive into these Lilac Sugar Shortbread Cookies.

Why You’ll Love These Lilac Sugar Shortbread Cookies

It’s easy to love these cookies for many reasons:

  • Buttery: Classic shortbread texture that melts in your mouth.
  • Floral: Subtle lilac flavour that feels delicate and elegant.
  • Textured: A light sugar coating adds a pleasant, slightly crisp finish.
  • Simple: No complicated steps or special equipment required.
  • Unique: A creative way to use lilac sugar in baking.

Flavour and Texture Profile

These lilac sugar cookies are tender, crumbly, and lightly crisp on the outside.

The lilac sugar infuses the dough with a gentle floral aroma, while the outer coating creates a delicate contrast in texture. The flavour is subtle and balanced, with buttery richness complemented by soft floral notes that never feel overpowering.

Ingredients You’ll Need for These Lilac Sugar Shortbread Cookies

It’s easy to make these lilac sugar shortbread cookies with a handful of ingredients:

  • Butter: Provides richness and classic shortbread structure.
  • Lilac sugar: Adds both sweetness and delicate floral flavour.
    • I used this quick and easy method for infused lilac sugar. Unlike the traditional method that requires to infuse sugar for up to one week, this express method allows you to use it in less than one day.
  • Flour: Creates the base structure of the cookies.
  • Corn starch: Ensures a softer, more tender crumb.
  • Salt: Balances and enhances the overall flavour.

How to Make Lilac Sugar Shortbread Cookies

To make these lilac sugar shortbread cookies, start by combining softened butter with lilac sugar until smooth. Then incorporate the dry ingredients to form a soft, pliable dough.

Shape the dough into small portions, roll them in additional lilac sugar for coating, and arrange on a baking sheet. Bake gently at a moderate temperature until the cookies are set but still pale, preserving the delicate floral flavour.

Possible Additions and Variations

Although these lilac sugar shortbread cookies are already delicate and elegant, you can easily customize them to create slightly different flavour profiles or textures:

  • Add citrus zest: Lemon or orange zest brightens the cookies and pairs beautifully with lilac.
  • Adjust sweetness: Increase or reduce the lilac sugar slightly depending on your preference.
  • Make them more floral: Lightly brush the cookies with lilac syrup before or after baking for a more pronounced aroma.
  • Skip coating: For a softer, more classic shortbread texture without the crisp exterior.
  • Double coating: Roll in lilac sugar both before and immediately after baking for extra texture.
  • Add a glaze: A light lilac or lemon glaze will create a slightly sweeter and more decorative finish.
  • Make them finer: Replace a small portion of flour with additional corn starch for an even more delicate crumb.

Directions

  • Soften the butter
Cut the butter into a few large pieces. Place in a microwave-safe bowl and heat for 25–40 seconds, until very soft and partially melted. Alternatively, melt gently in a small saucepan over low heat. The butter should be very soft but not hot.
  • Mix the base
Add lilac sugar, vanilla extract, and a pinch of salt to the butter. Stir with a wooden spoon for about 30 seconds, until smooth and well combined.
  • Form the dough
Add flour and mix until a soft dough forms. Do not overmix. If the dough appears too dry or crumbly, add 1–2 tsp (5–10 ml) water or milk to bring it together.
  • Rest the dough (optional)
You can use the dough immediately, but resting it in the refrigerator for 5–10 minutes will slightly improve texture and make it easier to handle.
  • Prepare for baking
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Roll and cut
Roll the dough to about 7 mm thickness. If slightly sticky, lightly dust the surface and rolling pin with flour (avoid adding too much). Cut into desired shapes using cookie cutters or a knife.
  • Coat with lilac sugar
Transfer cookies to the prepared baking sheet. Sprinkle a small amount of lilac sugar over each cookie and gently press it into the surface using your hand or a spatula.
  • Bake
Bake for 10–14 minutes, depending on size and desired texture:
    – About 10 minutes for softer, more delicate cookies
12–14 minutes for slightly crisper, lightly golden cookies
  • Cool and serve
Let cookies cool on the baking sheet for a few minutes, then transfer to a rack to cool completely.
