Hey folks, today I’m sharing another bright and refreshing carrot salad that is simple yet full of flavour. Shredded carrot salads appear in many cuisines and are loved for their crisp texture and natural sweetness. In this version, pistachios add nuttiness and crunch, while fresh dill and honey lemon dressing bring freshness and balance. So, let’s dive into this Carrot Salad with Pistachios.

Why You’ll Love This Carrot Salad with Pistachios and Honey Lemon Dressing

  • Fresh and vibrant. Crisp carrots create a naturally sweet and refreshing base.
  • Wonderful texture. Pistachios add pleasant crunch and nuttiness.
  • Balanced flavour. Honey and lemon create a gentle sweet-tart dressing.
  • Simple ingredients. The salad comes together with everyday pantry staples.
  • Make-ahead friendly. The flavours deepen as the salad rests in the refrigerator.

Flavour and Texture Profile

This carrot salad is crisp, light, and aromatic. Fresh carrots provide natural sweetness and vibrant colour, while dill adds a bright herbal freshness. Meanwhile, pistachios introduce a slightly buttery flavour and satisfying crunch.

At the same time, the honey lemon dressing gently coats the carrots and balances sweetness with citrusy acidity. As a result, the salad tastes refreshing, vibrant, and pleasantly light rather than heavy.

Why Pistachios Work Well with Carrots

Pistachios pair particularly well with carrots because both ingredients share a natural sweetness and subtle nuttiness. When combined, they create a flavour that feels both earthy and fresh.

In addition, pistachios add texture and richness to simple vegetable salads. Their slight saltiness also balances the sweetness of carrots and honey, which makes the overall dish more complex and satisfying.

Ingredients You’ll Need for This Carrot Salad with Pistachios

To make this Carrot Salad with Pistachios and Honey Lemon Dressing, you only need a few simple ingredients.

  • Carrots. Fresh carrots create the crisp and naturally sweet base of the salad.
  • Dill. Fresh dill adds brightness and herbal aroma.
  • Pistachios. Roughly chopped pistachios provide crunch and nuttiness.
  • Olive oil. Forms the base of the light dressing.
  • Honey. Adds gentle sweetness and balances the acidity.
  • Lemon juice or apple cider vinegar. Provides freshness and brightness.
  • Salt. Enhances the overall flavour and balances sweetness.

Possible Additions and Variations

  • Raisins or dried cranberries. Add bursts of sweetness.
  • Lemon zest. Enhances the citrus aroma of the dressing.
  • Parsley. Can replace part of the dill for a milder herb flavour.
  • Toasted sunflower seeds. Add additional crunch.

How to Make Carrot Salad with Pistachios

First prepare a simple honey lemon dressing by whisking olive oil, honey, lemon juice, and salt. Then combine the shredded carrots and fresh dill in a bowl.

Next toss the carrots with the dressing until everything is evenly coated. Finally, add the pistachios just before serving so they remain crisp and crunchy.

Ingredients

  • 6 cups shredded carrots (~ 650 gr. or 5-6 medium carrots)

  • about 1/2 cup (5-6 gr.) fresh dill, chopped

  • about 1/2 cup (50-60 gr.) shelled pistachios, roughly chopped – you can use salted or unsalted

  • 2-3 tbsp. (30-45 ml.) extra virgin olive oil

  • 1 to 1 1/2 tbsp. (20-30 ml.) honey – can use maple syrup

  • 1/2 tbsp. (7.5 ml.) lemon juice or apple cider vinegar – may add a bit more

  • a pinch of salt

Directions

  • In the small bowl, whisk together the oil, honey, lemon, and a pinch of salt (bare in mind the saltiness of pistachios).  Note: this amount of dressing will be enough to lightly coat the salad; you may want to increase it.
  • Gently combine the carrots with the dill and dressing in a medium bowl. Try and adjust the taste if necessary – you may want an extra touch of salt or even black pepper.
  • You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. Sprinkle with pistachios just before serving (otherwise, they will be soggy.) Enjoy!

  1. What a refreshing and vibrant way to kick off the year with this Carrot Salad with Pistachios! I love how you kept it light and healthy with the simple yet flavorful honey lemon dressing, making it a perfect choice for post-holiday meals.

  2. Great combination, Ben! We have all the ingredients on hand (I jus bought dill for a salmon mousse) so I think we will have this tonight as a side to our grilled steak. By the way, I thought I would try once more signing up to get your emails… I tried using my blog address and was told it was and “invalid request” so I tried our other address and it seemed to have worked. I will keep you posted!

  3. Something about grated carrot salad that I love.. This recipe with the honey and pistachios sounds amazing.

  4. I really like carrot salad, though I don’t make it as often as perhaps I should. I like the combo with pistachios (my favorite nut!) and the maple syrup intrigues me. I should give this a try.

  6. It is indeed hard to get back into the swing of things after the holiday season. This carrot salad is a great way to do it, though! And I love the crunch of pistachios in this one, too.

  7. Mmm. I love the maple syrup idea! Also pomegranate molasses or sour cherry molasses although they would change the color! Great recipe.
