Blueberry Salad with Caramelized Almonds
This Blueberry Salad with Caramelized Almonds is super easy and quick to make. Made with just a bunch of [mostly seasonal] ingredients, it is delightful and fresh. The main components are blueberries, cucumbers, and fresh greens. I used the combination of arugula and our garden herbs like parsley and mint. For the dressing, I used a simple yet lovely combination of lemon juice and maple syrup (honey would work, too.) And you can go ahead and totally skip the maple syrup – especially if your blueberries are super sweet. Also, you can add some crumbled goat cheese or feta.
And, of course, the best part of this salad is the nuts! Slivered almonds get toasted first. Then you will need to add butter, maple syrup, and a pinch of salt and continue cooking them in the caramel-y mixture over the low heat. The result? Luscious, sticky, buttery, and sweet and salty nuts. They are so good that they could totally disappear before you add them in this salad!

Oh my, Ben this salad sounds like such a glorious intoxication of flavors and textures!
