Hey, folks — I hope you’re all doing well! Today, I’m sharing one of my simplest cherry salads. While some couscous salads rely on elaborate dressings or long ingredient lists, this version lets fresh summer produce shine. Juicy cherries, mint, goat cheese, and pistachios create a beautiful balance of flavours and textures without much effort. So, let’s dive into this Cherry Couscous Salad.

Why You’ll Love This Cherry Couscous Salad with Goat Cheese and Pistachios

This couscous salad with cherries is easy, refreshing, and packed with summer flavour.

  • Simple: Requires only a handful of ingredients.
  • Refreshing: Cherries and mint create a bright flavour profile.
  • Balanced: Sweet fruit contrasts beautifully with tangy goat cheese.
  • Versatile: Perfect for lunch, picnics, or a light dinner.
  • Make-Ahead Friendly: Tastes even better after chilling briefly.

Flavour and Texture Profile

This cherry couscous salad delivers a wonderful balance of textures. The couscous is soft and fluffy, while the cherries add juicy bursts of sweetness. Meanwhile, the pistachios provide crunch and nuttiness, and the goat cheese contributes creaminess and tang.

Fresh mint brightens the entire dish, while either lime juice or balsamic vinegar adds a welcome touch of acidity. The result is a refreshing summer grain salad that’s both light and satisfying.

Why Cherries Work So Well in Couscous Salads

Cherries are an excellent addition to grain salads because they provide sweetness, juiciness, and acidity all at once.

Unlike softer fruits that may quickly lose their structure, cherries hold their shape well and provide pleasant bursts of flavour throughout the salad. Additionally, they pair beautifully with herbs, nuts, grains, and cheese.

Their natural sweetness also helps balance savoury ingredients, making them ideal for sweet and savoury couscous salads like this one.

Fine Couscous vs Pearl Couscous

Although both are called couscous, they create very different salads.

  • Fine Couscous: Light, fluffy, and delicate.
  • Pearl Couscous: Larger, chewier, and more substantial.
  • Fine Couscous: Hydrates quickly with hot water.
  • Pearl Couscous: Typically cooked like pasta.
  • Fine Couscous: Excellent for lighter fruit-based salads.
  • Pearl Couscous: Better suited for heartier grain salads.

For this recipe, fine couscous creates the light texture that allows the cherries and mint to remain the focus.

Ingredients You’ll Need for This Cherry Couscous Salad with Goat Cheese and Pistachios

This summer grain salad comes together with a surprisingly short ingredient list.

  • Fine Couscous: Forms the fluffy base of the salad.
  • Cherries: Add sweetness, colour, and juiciness.
  • Leafy Greens: Provide freshness and texture.
  • Mint: Brightens the flavour profile.
  • Pistachios: Add crunch and nuttiness.
  • Goat Cheese: Adds creamy tanginess.
  • Lime Juice or Balsamic Vinegar: Provides acidity and balance.

How to Customize This Cherry Couscous Salad Like a Pro

One of the best things about this cherry salad recipe is how adaptable it is.

  • Change the Cheese: Goat cheese is my favourite option, but feta, ricotta salata, Parmesan, or blue cheese also work well.
  • Choose Your Acid: Lime juice keeps the salad bright and refreshing, while balsamic vinegar adds sweetness and depth.
  • Swap the Nuts: Pistachios are a natural pairing with cherries, but almonds, pecans, and walnuts are excellent alternatives.
  • Try Different Greens: Arugula adds peppery notes, spinach creates a milder salad, and watercress contributes extra freshness.
  • Add More Fruit: Blueberries, blackberries, peaches, or nectarines pair beautifully with cherries.
  • Make It More Substantial: Grilled chicken, prosciutto, or chickpeas can turn the salad into a more filling meal.
  • Experiment with Herbs: Mint is especially good, but basil and parsley also work nicely.

Why This Cherry Couscous Salad Uses a Minimal Dressing

Unlike many grain salads that rely on a substantial dressing, this Cherry Couscous Salad keeps things intentionally simple. The cherries contribute plenty of natural juiciness, while the goat cheese adds creaminess and richness. As a result, only a small amount of lime juice or balsamic vinegar is needed to brighten and balance the flavours.

That said, the dressing is easy to adjust according to your preferences.

  • For a lighter salad: Use only lime juice and a little black pepper.
  • For more richness: Add a drizzle of extra virgin olive oil.
  • For a sweeter profile: Use balsamic vinegar instead of lime juice.
  • For extra complexity: Combine olive oil, balsamic vinegar, and a touch of honey or maple syrup.
  • For a stronger herb flavour: Add a little finely chopped mint to the dressing.

The goal is to complement the cherries, goat cheese, and pistachios rather than overwhelm them, which is why a restrained dressing works so well in this recipe.

How to Make Cherry Couscous Salad

Bring the water to a boil. Place the couscous in a bowl and add the boiling water along with the olive oil and salt. Stir once, cover, and let stand for 5–7 minutes. Fluff with a fork and allow the couscous to cool.

Combine the greens, mint, cherries, and couscous in a large bowl. Add the lime juice or balsamic vinegar and season with black pepper. For the best flavour, refrigerate for at least 30 minutes.

Before serving, sprinkle with the chopped pistachios and goat cheese.

Tips for Cooking Couscous for Salads

Fine couscous is one of the easiest grains to prepare, but a few simple techniques can improve both flavour and texture.

  • Use a slightly drier ratio. For salads, couscous should be fluffy rather than soft or mushy. A little less liquid often produces a better texture.
  • Add olive oil before hydrating. This helps keep the grains separate and prevents clumping.
  • Season the couscous itself. Adding salt before hydrating ensures the grains are seasoned throughout rather than relying entirely on the dressing.
  • Cover while resting. Trapping the steam helps the couscous hydrate evenly.
  • Fluff with a fork, not a spoon. This separates the grains and creates a lighter texture.
  • Allow it to cool before assembling the salad. Warm couscous can wilt delicate greens and soften herbs.
  • Taste before serving. Couscous tends to absorb flavours as it sits, so you may wish to add an extra squeeze of lime juice or a touch more seasoning before serving.

When properly prepared, couscous should be light, fluffy, and composed of separate grains rather than forming a dense mass. This texture makes it ideal for fresh summer salads like this Cherry Couscous Salad.

Can I Make Cherry Couscous Salad Ahead?

Absolutely.

In fact, this salad often benefits from a brief rest in the refrigerator. Chilling allows the flavours to meld together while keeping the salad refreshing.

For the best texture, add the pistachios and goat cheese shortly before serving.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

I do love summer cherries, and your salad looks tremendous! This is a must make salad!

  2. I agree that the heat is baking everyone’s brains right now – although I might disagree with you that it will be better in December! The snow usually puts me in a pretty frumpy mood. Let’s go with ‘it’ll be better in October’. In the meantime, though, I love the flavors in this salad. The sweet + salty + couscous is a really fun combination. The Salad King strikes again!
