Hello everyone – I hope you’re doing well. In my previous post, I talked about a “Little Friday” expression. Whatever you call Wednesdays and Thursdays, we can all agree that you can feel Friday already, right? Also, I don’t want to brag, but it’s my additional day off tomorrow. I hope you are jealous :) But you shouldn’t indeed – look at this delightful salad I am sharing with you!
As a mentioned yesterday, I really want to squeeze a couple of tasty summer recipes with seasonal fruit before I continue with lavender. By the way, I checked the grocery store yesterday, and I must report the cherry season is over here in Nova Scotia. You can still get some, but the price is ridiculous. No worries though. I won’t need to file for a bankruptcy as I made this salad sometime back in July.

Hmm, that’s it. I thought I have way more, a dozen or so. Ok, 7 cherry salads that’s almost a lot.
Cherry Ham Salad
Anyway, this Cherry Ham Salad is absolutely delicious and a breeze to make. You know what’s special in this salad? It’s served warm! I know what you think – Ben, are you seriously offering a warm salad for this horribly hot summer? Yes I am indeed. Well, you can always enjoy it on a fresher rainy day. Besides, you can always cool the warm ingredients down; that’s just I think ham works better lightly warm here.
As you can imagine, this is a perfect example of sweet and savoury salad combinations. If you want to add more salty notes, please add some cheese, like shaved parmesan. It will be so good here, for a balance. Ether way, this will be delicious.

minutesPecans and ham get lightly caramelized in maple syrup and then combined with juicy cherries in this Cherry Ham Salad. Serves 2 as a main course, 4-6 as a side dish or appetizer.
Ingredients
100-150 gr. cooked lean ham, cubed
about 1/2 cup pecans, roughly chopped
1/4 tsp. olive oil
1-2 tbsp. maple syrup
a pinch of dried herbs (Like Italian seasoning), optional
a good pinch of salt and black pepper, each
1 cup fresh cherries, pitted
2-3 handfuls of spinach or other leafy greens
optional additions: shaved / grated cheese such as Parmesan
Directions
- Add the olive oil to a pan along with the cubed ham and cook over high-medium heat for about 2-3 minutes.
- Add the pecans, toast 2 minutes.
- Stir in the maple syrup. Lower the heat (low-medium). Season with salt, pepper, and dried herbs (if using). Cook for another 2 minutes or so, until nice and glossy. Off heat. You can serve it right away or let it cool a little. (Just don’t allow to completely cool as it works better when still slightly warm.)
- Combine the spinach with cherries. Stir in the ham-pecan mixture. Enjoy!

I love making ham on the smoker and brushing it with a maple glaze, so I’m sure I would love the ham in this salad, too. And adding in the cherries is such a nice twist – cherry and ham go so well together! The Salad King strikes again… :-)

I feel like everyday should be Friday, but today also actually happens to be Friday, so yes I can feel it. ;) I hope you are having a wonderful day off! Now, on to this salad – BEAUTIFUL! I haven’t looked at the price of cherries, but I’m certainly hoping I don’t go broke trying to buy some! This salad looks absolutely delicious, Ben – though I must admit, I’m not a fan of ham (it’s a texture thing), so I’ll be swapping that out for prosciutto – YUM! Can’t wait to try this recipe!
