Ingredients

  • 100–150 g cooked lean ham, cubed

  • 1/2 cup (55–60 g) pecans, roughly chopped

  • 1/2 tsp (2.5 ml) olive oil

  • 1–2 tbsp (15–30 ml) maple syrup

  • Pinch of dried herbs, such as Italian seasoning (optional)

  • Good pinch of salt and black pepper, each

  • 1 cup (140–150 g) fresh cherries, pitted

  • 2-2–3 handfuls spinach or other leafy greens (about 50–80 g)

  • Optional: shaved or grated Parmesan

Directions

  • Cook the Ham
    Add the olive oil and cubed ham to a pan. Cook over medium-high heat for 2–3 minutes.
  • Add the Pecans
    Add the pecans and toast for about 2 minutes, stirring often.
  • Glaze the Mixture
    Stir in the maple syrup and reduce the heat to medium-low. Season with salt, pepper, and dried herbs if using. Cook for another 2 minutes or until glossy. Remove from heat and let cool slightly, but do not cool completely.
  • Assemble the Salad
    Combine the spinach or greens with the cherries. Add the warm ham and pecan mixture. Finish with Parmesan if desired and serve immediately.
