I did not use any dressing, except a little extra drizzle of oil, because this salad is already juicy to my liking. But you are welcome to add more olive oil or even a drizzle of orange or lemon.

Although this Apricot Pistachio Couscous Salad is already balanced and refreshing, you can customize it easily:

Once cooled, add the cucumbers, dried apricots, pistachios, mint, and arugula or greens. If desired, drizzle with a little extra olive oil and season with black pepper. Toss gently and serve.

Do You Need a Dressing for This Couscous Salad?

This apricot pistachio couscous salad is intentionally kept quite light. Because the cucumbers, herbs, olive oil, and dried apricots already add freshness and moisture, I personally did not use much dressing beyond a small extra drizzle of olive oil.

However, you can absolutely make the salad more dressed if desired. Some great options include:

  • Extra virgin olive oil.
  • Fresh lemon juice.
  • A little orange juice for subtle sweetness.
  • Light lemon vinaigrette.

The salad is flexible, so you can easily adjust the richness and acidity to your liking.
