Ingredients

  • 4 cups (about 600 g) chilled watermelon, cubed

  • 1 cup (170 g) strawberries, hulled and sliced

  • 1/2 cup (about 75 g) crumbled feta, or more

  • 1/3 cup (about 40 g) pistachios, roughly chopped (I used salted)

  • a generous handful of arugula

  • fresh mint leaves, as desired, torn or chiffonade

  • 1-2 tbsp (15-30 ml) olive oil

  • a little drizzle of honey (optional)

Directions

  • In a bowl, combine the watermelon with strawberries, arugula, and mint. Drizzle with the olive oil and a little of honey, if desired. Divide between plates and sprinkle with the feta and pistachios. Enjoy right sway. This salad is not suitable for making in advance or keeping the leftovers; I would not recommend keeping the leftovers refrigerated for longer than 30-60 minutes.
