Also, can you believe it is already the middle of August? That is shocking, am I right?
And while the season lasts, we should enjoy all the seasonal fruit and berries. For us, this is watermelon season these days.
Watermelon Strawberry Pistachio Salad
This Watermelon Strawberry Pistachio Salad is ridiculously easy to make, but the flavour profile is nothing short of outstanding! It is a perfect combination of sweet and salty things.
In this salad, sweet watermelon and strawberries are nicely balanced by feta and pistachios (I used salted here). Also, mint and arugula adds nice herbal and peppery notes.
While this dish is already juicy and does not require any dressing, a little drizzle of olive oil is always a good idea. Other additions that you can play around with would be balsamic vinegar or / and honey. It really depends on your preferences and natural sweetness of your fruit.

Watermelon Strawberry Pistachio Salad

minutesThis Watermelon Strawberry Pistachio Salad is juicy, refreshing, sweet, and so tasty. With the addition of peppery arugula, fresh mint, and salty feta, this is a great combination of sweet and salty flavours.
Ingredients
4 cups (about 600 gr.) chilled watermelon, cubed
1 cup (170 gr.) strawberries, hulled and sliced
1/2 cup (about 75 gr.) crumbled feta, or more
1/3 cup (about 40 gr.) pistachios, roughly chopped (I used salted)
a generous handful of arugula
fresh mint leaves, as desired, torn or chiffonade
1-2 tbsp. (15-30 ml.) olive oil
a little drizzle of honey (optional)
Directions
- In a bowl, combine the watermelon with strawberries, arugula, and mint. Drizzle with the olive oil and a little of honey, if desired. Divide between plates and sprinkle with the feta and pistachios. Enjoy right sway. This salad is not suitable for making in advance or keeping the leftovers; I would not recommend keeping the leftovers refrigerated for longer than 30-60 minutes.

I love ridiculously easy to make recipes! I can see how the salty and sweet work well together in this recipe, Ben. It’s still watermelon season here in the North Carolina mountains…I was tempted to buy one earlier this week. Guess I need to go get that watermelon so I can make this salad!
