Ingredients

  • 2 Naan flatbreads or similar breads

  • 1 l arge onion, sliced

  • 1 tbsp (15 ml) olive oil

  • 1/2 –1 tbsp (7.5-15 g) butter

  • 1/2-1 tsp (2.5-5 g) balsamic vinegar, to taste

  • 100 –125 g cooked leftover turkey, sliced or torn

  • 1/4 –1/3 cup (60–80 ml) cranberry sauce

  • 75 –100 g Brie cheese, sliced or torn into pieces

  • 50-70 g cooked peeled chestnuts, crumbled

  • Fresh rosemary, a few small sprigs, minced

  • Fresh thyme, a few sprigs, leaves picked

  • extra virgin olive oil, for brushing naan edges and prosciutto after baking (optional)

  • orange zest, optional, for serving

Directions

  • Start by caramelizing the onions. Heat 1 tablespoon olive oil and ½ to 1 tablespoon butter in a heavy-bottomed skillet over low-medium heat. Add the sliced onion and cook slowly for 12–15 minutes, stirring occasionally, until soft, and lightly caramelized. Finish with a small splash of balsamic vinegar and set aside.
  • Preheat the oven to 400°F (200°C). Place the naan breads on a baking sheet and lightly brush the edges with olive oil if desired. Evenly spread a thin layer of soft cheese (cream cheese or goat cheese) over each naan. Scatter the caramelized onions, turkey, and chestnuts followed by the Brie and spoonfuls of cranberry sauce. Scatter fresh rosemary or thyme over the top.
  • Bake for 8-10 minutes, or until the cheese is melted and bubbling and the naan is crisp around the edges. Remove from the oven, slice, garnish with a little orange zest (if desired), and serve warm. Enjoy!
