It’s almost March, but it seems the winter is not going to say us goodbye here in Canada. It was another Artic blast in many Canadian provinces over this weekend. Nova Scotia was not the exception. Plus, it appears we are finally having quite a few snowy days – after mostly rainy January.
This means, we are not saying “goodbye” to comfort food, either. Are we on the same page here?
Indeed, we’ve been enjoying pasta almost every weekend this winter. Hence, I will be sharing some pasta ideas soon.
Sun-Dried Tomato Veal Pasta
This Sun-Dried Tomato Veal Pasta is super easy to make, and it doesn’t require too much of your time. The ragù needs to be simmered for about an hour, but this is still faster than a classic Italian method. Besides, you can always make this ragù on weekend to enjoy weekday meals – by mixing up with freshly cooked pasta. You can also use other carbs choices such as rice, couscous, or even vegetables for a healthy version.
The aromatics include dry vermouth, onions, garlic, and thyme. Simple but so good!

Ingredients
1 lb. (450 gr.) pasta of your choice
1 tbsp. olive oil or oil from sun-dried tomatoes
1 medium onion, minced
2-4 garlic cloves, minced
1 lb. (450 gr.) ground veal
1/2 cup dry vermouth (or white wine)
1/2 to 2/3 cup sun-dried tomatoes, drained and sliced
1/2 to 2/3 tsp. salt
pepper, to taste
1 tbsp. thyme, preferably fresh; other good options include oregano and parsley
~ 1/2 cup broth or water
Directions
- In a large pan heat the olive oil over low-medium heat and cook the onions with garlic, 5-7 minutes, until soft, translucent but not browned.
- Increase heat to high medium or low high. Add the ground veal and cook, stirring often to break large pieces, and cook about 7 minutes until the veal is no longer pink.
- Add the vermouth (or wine) and cook for 1-2 minutes.
- Reduce heat again. Stir in the sun-dried tomatoes and thyme and season with the salt and pepper. Cover and simmer for about 45 to 60 minutes, stirring occasionally and adding some broth or water when needed; I used about 1/2 cup.
- In the meantime, cook the pasta in salted boiling water as per cooking recommendations on the package, until al dente. Drain reserving up to one cup of pasta liquid.
- Stir in the drained pasta into the meat sauce slowly adding the reserved pasta water, gently mixing, until the desired consistency (probably you will not need all of it.) Serve immediately sprinkled with more fresh herbs or / and cheese, if desired. Enjoy!
