- Butter. Unsalted butter is my preference because it lets you control the salt level, although salted butter also works if you reduce the added salt slightly. Use real butter rather than margarine for the best flavour and the classic shortbread texture.
- Light brown sugar. I intentionally use much less sugar than many similar recipes because my homemade rose petal jam isn’t overly sweet. The light brown sugar adds a subtle caramel note without overpowering the floral filling.

Simply soften the butter in the microwave until very soft (but not completely melted), then stir in the brown sugar, vanilla, flour, salt, and chopped pistachios.
