Hey folks – I hope you all are doing well!

After taking a short break from our greenhouse situation for a few sea buckthorn recipes, I am back to the greenhouse produce. Apparently, there is no escaping it quite yet! And today we are dealing with eggplant by grilling it and then giving it a simple, flavourful marinade. So, let’s dive into this recipe for grilled marinated eggplant with garlic and herbs.

What Makes This Grilled Marinated Eggplant Special?

There are many ways to make marinated eggplant, from frying to roasting. For this version, I opted for grilling, which gives the vegetables plenty of flavour while keeping the preparation relatively light.

Grilling the Eggplant First

Grilling works particularly well for this marinated grilled eggplant. It develops flavour while removing some of the moisture, so the slices readily absorb the marinade afterwards.

There are a few other benefits, too:

  • More flavour. Grilling creates lightly charred, smoky notes that work beautifully with garlic, oregano, and vinegar.
  • Less oil. Eggplant can absorb quite a lot of fat when cooked in a skillet. You will still need to lightly oil the slices before grilling, but this method generally requires less oil than pan-frying.
  • Good texture. Grilled slices remain substantial enough to handle the marinade without immediately falling apart.
  • Better absorption. Adding the marinade while the grilled eggplant is still warm helps it take on all those savoury and tangy flavours.

So, if you are looking for a grilled eggplant recipe that can be prepared ahead and served at room temperature or chilled, this method is worth trying.

A Simple Garlic and Herb Marinade

The marinade for this grilled marinated eggplant is intentionally straightforward. Olive oil provides richness, while red wine vinegar adds acidity. A little balsamic vinegar is also lovely for a softer, rounder flavour.

Garlic and dried oregano provide plenty of savoury character, while fresh basil or parsley adds freshness at the end. There is no need for an overly complicated mixture because the smoky grilled eggplant already has plenty of flavour.

  • Tender yet chewy. The texture deserves a special mention. The eggplant becomes somewhat firmer and chewier after marinating, particularly the longer it sits.

Indeed, do not expect this grilled marinated eggplant to have the meltingly soft texture of stewed or heavily fried eggplant. In my batch, the slices developed a pleasant chew after absorbing the marinade, and I think this texture works nicely here.

Ingredients You’ll Need For Grilled Marinated Eggplant

You will need only a handful of familiar ingredients for this marinated eggplant recipe.

  • Eggplant. Choose firm eggplant without soft spots. Slice it thick enough to hold its shape on the grill and after marinating.
  • Extra virgin olive oil. You will need some for grilling as well as for the marinade.
  • Red wine vinegar. This provides most of the acidity and gives the marinated eggplant a pleasantly tangy flavour.
  • Balsamic vinegar. A small amount is optional but helps round out the sharper notes of the wine vinegar.
  • Garlic. Fresh garlic works particularly well because its flavour gradually infuses the marinade.
  • Dried oregano. A natural pairing with grilled eggplant with garlic and olive oil.
  • Fresh basil or parsley. Either works well, depending on the flavour profile you prefer.
  • Salt. Use it conservatively. Grilled eggplant absorbs the marinade and seasoning remarkably well.
  • Black pepper. Add it according to your taste.

How to Marinate Eggplant

If you are wondering how to marinate eggplant without frying it first, grilling is a simple alternative. Lightly coat the eggplant slices with olive oil, then grill them until cooked through with attractive grill marks. There is no need to season them heavily at this point because plenty of flavour will come from the marinade.

Meanwhile, combine the olive oil, red wine vinegar, optional balsamic, garlic, dried oregano, and salt. Add the grilled eggplant while it is still warm and gently toss or turn the pieces to coat. Let the grilled marinated eggplant sit for about 20–30 minutes, then add the fresh herbs.

One important lesson from my batch is to be conservative with salt. I did not salt the eggplant before grilling and used 1/2 teaspoon in the marinade for about 450–500 grams of eggplant. Even so, I found it slightly too salty because the eggplant absorbed the seasoning so efficiently. I recommend starting with about 1/4 teaspoon instead, letting the eggplant marinate, and only then adding more if necessary.

Can I Make Marinated Eggplant Ahead of Time?

Yes. In fact, grilled marinated eggplant benefits from some resting time because the flavours need an opportunity to mingle. However, its texture will continue to change.

After about 20–30 minutes, you get a nice balance between the freshly grilled texture and the marinade. If you leave the grilled eggplant with herbs and garlic for several hours, the flavours become more pronounced, while the eggplant itself becomes somewhat firmer and chewier.

Therefore, how far ahead you prepare it depends on the texture you prefer. Personally, I would give it at least a short marinating time before serving.

Possible Additions and Variations

While I like keeping this grilled marinated eggplant fairly simple, there is certainly room for small adjustments.

  • Fresh herbs. Use basil, parsley, or even some fresh mint.
  • Different vinegar. White wine vinegar can replace red wine vinegar. You can also use more balsamic for a sweeter, mellower profile.
  • Honey. If your vinegar tastes particularly sharp, a small amount of honey can soften the acidity.
  • Chili flakes. Add a pinch if you prefer some heat.
  • Extra garlic. Garlic lovers can certainly add more, but remember that raw garlic becomes stronger as the marinated eggplant sits.
  • Capers or feta. Either can be added before serving if you want to turn this simple side into something a little more substantial.

How Long Does Marinated Eggplant Last?

Keep leftover grilled marinated eggplant refrigerated in a covered container. I recommend enjoying it within a few days for the best flavour and texture. However, I do believe it will keep finely up to one week if refregirated.

Keep in mind that both will change during storage. The garlic and herbs become stronger, while the eggplant continues absorbing the marinade and develops a chewier texture.

Also, this is a quick marinated eggplant recipe rather than a preserved or properly pickled product. It should always be refrigerated and is not intended for canning or long-term storage.

What to Serve with Grilled Marinated Eggplant

This grilled eggplant with herbs is quite versatile and can be served as a side dish or as part of a larger spread. Here are a few ideas:

  • Fresh bread for soaking up the flavourful oil and juices
  • Grilled chicken or meat for a simple summer meal
  • Cheese such as feta or fresh mozzarella
  • Mediterranean spreads including hummus and other vegetable appetizers
  • Fresh salads for a lighter meal
  • Antipasto-style platters with bread, cheese, olives, and other marinated vegetables

You can serve the grilled marinated eggplant slightly warm after its initial resting time, at room temperature, or chilled.
