Apparently, one marinated greenhouse vegetable was not enough! After making my Grilled Marinated Eggplant with Garlic and Herbs, I gave zucchini a similar treatment. However, because zucchini has a much more delicate flavour, I kept its marinade lighter and softer. So, without further ado, let’s dive into this marinated zucchini recipe.
What Makes This Grilled Marinated Zucchini Special?
Grilling and marinating is a particularly nice way to prepare zucchini. The grill adds flavour without masking its delicate character, while a short rest in the marinade makes it more interesting without turning it into something heavily pickled.
Grilling the Zucchini First
For this grilled zucchini recipe, I lightly coated the slices with oil before grilling. You need enough oil to encourage browning and prevent sticking, but there is no need to use a large amount.
Grilling also offers a few advantages:
- Concentrated flavour. Some moisture evaporates as the zucchini cooks, concentrating its mild flavour.
- Lightly charred notes. Grilling adds another layer of flavour without overwhelming the zucchini.
- Less fat. You only need to lightly oil the zucchini rather than cook it in a generous amount of oil.
- Better for marinating. Warm grilled zucchini readily absorbs the balsamic and honey mixture.
The result is marinated grilled zucchini that still tastes primarily of zucchini, just with a little more character.
Grilled Marinated Zucchini With A Delicate Balsamic and Honey Marinade
Compared to the marinade I used for eggplant, this one is intentionally softer. Zucchini has a mild flavour and can easily become overwhelmed by too much vinegar or seasoning.
For my grilled marinated zucchini, I used olive oil, just 1/2 to 1 tablespoon of balsamic vinegar, 1 teaspoon of honey, dried oregano, and a modest amount of salt. I also added a few splashes of water.
That little bit of water works particularly well here. It loosens and softens the marinade, helping the balsamic and honey coat the zucchini without making the flavour too concentrated.
Flavour and Texture Profile
This Mediterranean grilled zucchini has a fairly restrained flavour profile:
- Mild and savoury. The flavour of the zucchini remains noticeable.
- Gently tangy. Balsamic adds acidity without the sharper character of some other vinegars.
- Subtly sweet. A small amount of honey rounds out the balsamic rather than making the zucchini noticeably sweet.
- Herbaceous. Dried oregano adds a Mediterranean-inspired note.
- Tender but varied. Depending on their thickness, some zucchini slices remain firmer while others become softer after marinating.
In fact, I quite enjoyed having slightly different textures throughout the dish.

Ingredients You’ll Need For Grilled Marinated Zucchini
You only need a few simple ingredients for this marinated zucchini recipe.
- Zucchini. Choose firm zucchini and avoid slicing it excessively thinly. Some variation in thickness is absolutely fine.
- Olive oil. Use a little for grilling and more as the base of the marinade.
- Balsamic vinegar. Its slightly sweeter, rounder acidity works particularly well with mild zucchini.
- Honey. Just a small amount balances the balsamic and adds subtle sweetness.
- Dried oregano. This gives the grilled zucchini with balsamic a savoury, herbaceous character.
- Salt. Start conservatively and add more after the zucchini has had time to absorb the marinade.
- Water. A few splashes help create a lighter, more delicate marinade.
How to Make Grilled Marinated Zucchini
To make grilled marinated zucchini, lightly coat the slices with oil and grill until tender with some attractive browning or grill marks. Avoid cutting the zucchini too thinly. Thin slices can become very soft and may lose their shape once they have been grilled and then marinated.
Meanwhile, combine 2–3 tablespoons of olive oil with 1/2 to 1 tablespoon balsamic vinegar, 1 teaspoon honey, 1/2 teaspoon dried oregano, and about 1/4 teaspoon salt. Add a few splashes of water to loosen the mixture. Combine the warm zucchini with the marinade and let it rest so the flavours can absorb.
There is no need to obsess over making every piece exactly the same thickness. In my batch, the slightly varied sizes created different textures, with some pieces softer and others retaining more bite. I actually think that works particularly well for this grilled zucchini with honey and balsamic.
Can I Make Marinated Zucchini Ahead of Time?
Yes, you can make marinated zucchini ahead, although its texture will gradually change.
If you prefer the zucchini to retain more structure, give it a relatively short marinating time and serve it the same day, although they will be delicious for several days. As the marinated zucchini sits, it continues absorbing moisture and flavour, while thinner slices in particular become softer.
Therefore, when learning how to marinate zucchini, thickness is probably more important than an exact resting time. Keeping most slices reasonably substantial gives you more flexibility if you plan to prepare the dish in advance.

Possible Additions and Variations
The restrained marinade is part of what I like about this grilled marinated zucchini, but you can make a few small adjustments.
- Balsamic vinegar. Start with 1/2 tablespoon for a particularly mild marinade and increase it to 1 tablespoon if you prefer more acidity.
- Honey. You can adjust it slightly depending on the sweetness and intensity of your balsamic.
- Fresh herbs. Basil or parsley would be natural additions if you want a fresher herbal element.
- Garlic. A little minced garlic could work, although I prefer keeping this version softer than the garlic-forward eggplant variation.
- Water. Add a few splashes as needed. It is especially useful if your balsamic has an intense or concentrated flavour.
When figuring out how to make marinated zucchini to suit your taste, I would adjust the balsamic first rather than adding much more honey. The idea is a savoury zucchini dish with just a subtle sweet note.
How Long Does Marinated Zucchini Last?
Keep grilled marinated zucchini refrigerated in a covered container and enjoy it within a few days. The zucchini will gradually soften as it sits, particularly if some of the slices are thin.
Also, this is a quick marinated zucchini recipe rather than a preserved or canned product. It needs to remain refrigerated and is intended to be enjoyed relatively fresh.

This grilled zucchini with oregano, balsamic, and honey works particularly well as part of a summer meal. You could pair it with:
