Tomato season is still going strong, and I am certainly not ready to move on to fall flavours yet. So, if you also have plenty of beautiful cherry tomatoes to enjoy, here is another simple and delicious idea for you.

These cherry tomatoes with feta are fresh, savoury, and packed with late-summer flavour. Plus, they require only a handful of ingredients and very little effort – exactly what we need while those tomatoes just keep coming. So, let’s dive into these quick and lightly marinated cherry tomatoes with feta and balsamic vinegar.

There are many delicious ways to combine tomatoes with feta and balsamic. However, this recipe is particularly simple and all about fresh late-summer flavours.

  • Alongside chicken or meat. The fresh acidity works particularly well with grilled or roasted dishes.
  • With grains. Couscous, bulgur, or farro can turn cherry tomatoes with balsamic into a more substantial meal.
  • As part of an appetizer spread. Pair them with olives, bread, grilled vegetables, and other simple bites.

And definitely do not discard the dressing left at the bottom of the bowl. It combines olive oil, balsamic, oregano, feta, and a little tomato flavour, so some good bread will take care of it!

Storage and Make Ahead

These marinated cherry tomatoes with balsamic and feta are best enjoyed the day you make them. However, you can refrigerate leftovers in an airtight container for a day or two.
