Ingredients

  • 2 medium Russet potatoes (about 1 lb. or 450-500 g.), peeled and cubed

  • a large bunch of chives (about 50-75 g.), roughly chopped

  • a large handful of arugula, optional

  • 125-150 g. semi-hard cheese (e.g., Cheddar, Gouda, or Gruyere) of your choice, grated – I used smoked cheddar

  • 4-6 cups of water or vegetable broth

  • salt and pepper, to taste

  • 1 tsp. (5 g.) smoked paprika

  • extra cheese, chives, and chive blossoms – optional, for serving

Directions

  • Add the water or vegetable broth (starting with 4-5 cups) and chopped potatoes to a large-medium pot, bring to a boil, then reduce heat and simmer for about 10 minutes (until the potatoes are starting to soften), skimming the scum.
  • Add the chopped chives, arugula (if using), and seasonings to taste. Cover and simmer for about 10-12 minutes.
  • At the end, stir in the shredded cheddar and stir until melted. Using an immersion, blend until the desired consistency. Add the remaining cup(s) of water / broth if you prefer a thinner version. Try and season more, if desired.
