Today, I am happy to share an easy recipe for this Creamy Chive Cheese Soup with you. After all, if you have a garden, you may have plenty of fresh chives by now.
Creamy Chive Cheese Soup
As stated, this is a super easy recipe. It is similar to another recipe on this blog –Potato Chive Soup.
To make this soup, you will need the following ingredients:
– Potatoes – use the variety with a high starch content, such as Russet potatoes. Waxy potatoes are not a good option for soup recipes requiring mashing.
– Fresh chives – use young, tender chives of your choice. In this recipe, I combined regular and garlic chives. If using less delicate, matured chives, remove and discard any woody parts.
– Semi-hard cheese of your choice. Cheddar, Gouda, Havarti, and Gruyere are all excellent choices. I used smoked cheddar, and the result was great.
– Seasonings like salt, smoked paprika, and black pepper. You can use chipotle instead of pepper.
– A handful of arugula – optional, for a colour and a peppery kick.

Flavour and Texture Profile
The texture of this soup is creamy, rich, and light, without any added cream or butter. Starchy potatoes and cheese help achieve this lovely texture.
The flavour profile is delicate. It does not have an onion-forward aroma, it has a herbal hint. And, of course, smoked cheddar gives so much flavour.

This Creamy Chive Cheese Soup is an easy recipe that you can make in less than 30 minutes with only several simple and affordable ingredients.
Ingredients
2 medium Russet potatoes (about 1 lb. or 450-500 g.), peeled and cubed
a large bunch of chives (about 50-75 g.), roughly chopped
a large handful of arugula, optional
125-150 g. semi-hard cheese (e.g., Cheddar, Gouda, or Gruyere) of your choice, grated – I used smoked cheddar
4-6 cups of water or vegetable broth
salt and pepper, to taste
1 tsp. (5 g.) smoked paprika
extra cheese, chives, and chive blossoms – optional, for serving
Directions
- Add the water or vegetable broth (starting with 4-5 cups) and chopped potatoes to a large-medium pot, bring to a boil, then reduce heat and simmer for about 10 minutes (until the potatoes are starting to soften), skimming the scum.
- Add the chopped chives, arugula (if using), and seasonings to taste. Cover and simmer for about 10-12 minutes.
- At the end, stir in the shredded cheddar and stir until melted. Using an immersion, blend until the desired consistency. Add the remaining cup(s) of water / broth if you prefer a thinner version. Try and season more, if desired.
