Ingredients

  • 1 tbsp. (15 ml) olive oil

  • 1 large onion, sliced

  • 2-3 garlic cloves, minced

  • 8 cups (~600 gr.) broccoli florets, frozen of fresh

  • 5 cups (1200 ml) light broth of your choice or water

  • 2 cups (200 gr.) shredded hard cheese of your choice – cheddar, Gouda or Swiss all are good options; you can also use smoked cheese + more for serving, optional

  • 1 tbsp. fresh thyme

  • 1 tsp. smoked paprika

  • 1/2 tsp. chipotle powder

  • 2/3 – 1 tsp. salt

Directions

  • In a large pot, heat the olive oil over medium heat and sauté the onions and garlic until tender, about 5 to 7 minutes.
  • Pour in the broth and broccoli (if you are using frozen broccoli, there’s no need to thaw them; just the cooking time will slightly increase as the frozen broccoli will cool down the water), and season with the thyme, smoked paprika, chipotle, and salt to taste.
  • Bring to a simmer, cover, then reduce heat to medium-low. Simmer until broccoli is tender about 7 to 10 minutes; frozen broccoli may need up to 15 minutes.
  • Once broccoli is tender remove soup from heat and stir in the shredded cheese, stirring with a spatula or wooden spoon to melt. Let it cool a bit until easy to handle.
  • Using a regular or immersion blender, process until smooth. If the soup is too thick to your liking, add a little of hot water or broth. Try and adjust the seasoning if necessary. When serving, sprinkle with extra cheese and fresh herbs, if desired. Enjoy!
