Hey folks, I hope you all doing well!

Although Christmas may be over, the holiday season isn’t quite finished yet. This is the time when leftovers meet slower evenings and cozy, shareable meals still feel very welcome. Over the next little while, I’ll be sharing a few more holiday-inspired and winter recipes you can enjoy for your New Year’s Eve celebrations and beyond. So, let’s dive into this leftover turkey cranberry brie flatbread.

Why You’ll Love This Turkey Cranberry Brie Flatbread Recipe

  • Perfect for leftovers: This is an easy and satisfying leftover turkey flatbread recipe that feels intentional, not improvised.
  • Balanced flavours: Sweet cranberry sauce, rich Brie, savoury turkey, and deeply caramelized onions work beautifully together.
  • Quick and flexible: Great for weeknights, casual entertaining, or slicing into smaller pieces for a holiday appetizer spread.
  • Seasonal and comforting: Festive enough for winter gatherings, yet simple enough to enjoy anytime.

Flavour and Texture Profile

This flatbread hits all the right notes: crisp edges from the naan, soft and melty Brie, juicy turkey, and pockets of sweet-tart cranberry sauce. The caramelized onions add depth and richness, while fresh rosemary or thyme brings a subtle herbal lift that keeps everything balanced and not overly heavy.

Ingredients You’ll Need for This Leftover Turkey Cranberry Brie Flatbread

It’s a breeze to make this leftover turkey flatbread recipe with just a bunch of ingredients, including some leftovers you may already have.

  • Naan bread: Soft naan works perfectly as the base, creating crisp edges while staying tender in the centre once baked.
  • Leftover turkey: Cooked turkey, sliced or gently shredded, is ideal for this flatbread and turns holiday leftovers into something special.
  • Cranberry sauce: Sweet and slightly tangy cranberry sauce balances the savoury elements and adds a festive touch. While you can use store-bought sauce, homemade is always the best. Think of Honey Orange Cranberry Sauce with Rosemary, Festive Cranberry Sauce with Orange Liqueur, Cranberry Maple Orange Sauce with Brandy and Rosemary, or Festive Cranberry Orange Sauce with Brandy.
  • Brie cheese: Sliced or torn into pieces, Brie melts smoothly and adds rich, creamy depth without overpowering the other toppings.
  • Soft cheese: A thin layer of cream cheese or goat cheese creates a creamy base that enhances the flavour and keeps the naan moist.
  • Fresh rosemary and thyme: A small amount of fresh herbs brings warmth and aroma, lifting the overall flavour profile.

For the caramelized onions:

  • Onion: One large onion, thinly sliced, forms the sweet and savoury backbone of the flatbread.
  • Olive oil: Helps soften the onions and prevents sticking during the slow sauté.
  • Butter: Adds richness and enhances the natural sweetness of the onions.
  • Balsamic vinegar: A small splash at the end deepens flavour and rounds everything out beautifully.

How to Make Leftover Turkey Flatbread

Start by caramelizing the onions. Heat 1 tablespoon olive oil and ½ to 1 tablespoon butter in a skillet over medium heat. Add the sliced onion and cook slowly for 12–15 minutes, stirring occasionally, until soft, golden, and deeply caramelized. Finish with a small splash of balsamic vinegar and set aside.

Preheat the oven to 400°F (200°C). Place the naan breads on a baking sheet and lightly brush the edges with olive oil if desired. Layer slices of Brie over the naan, followed by the leftover turkey, spoonfuls of cranberry sauce, and the caramelized onions. Scatter fresh rosemary or thyme over the top.

Bake for 8-10 minutes, or until the cheese is melted and bubbling and the naan is crisp around the edges. Remove from the oven, slice, and serve warm.
