Ingredients

  • 8-10 fresh figs, halved or quartered

  • 2 tbsp. (30 g) butter

  • 1 cup (125 g) walnut halves, roughly chopped

  • 1/4 cup (60 ml) maple syrup

  • 2 tbsp. (40 g) maple sugar

  • 1/2 tsp. cinnamon

  • 1/4 tsp. cardamom

  • 1 tsp. (5.5 ml) vanilla extract

  • a pinch of salt

Directions

  • Add the butter to a skillet, preferably a heavy-bottomed one, and melt it over low-medium heat.  
  • Once the butter has melted, add the walnuts and toast them for 2-3 minutes, until fragrant.
  • Next, pour in the maple syrup, maple sugar, cinnamon, cardamom, and salt (if using). Let the mixture simmer for 2-3 minutes to thicken slightly.
  • Now, place the figs in the sauce. Simmer, gently flipping them, for a few minutes until soft and caramelized. Cooking time depends on the ripeness, but it should not take more than 4-5 minutes, or even less, if the fruit is very ripe. Remember, figs will continue to cook off the heat from residual warmth.
  • Finally, stir in the vanilla and turn off the heat. Serve warm or at room temperature. Enjoy!
