I’m excited to share a spontaneous new recipe inspired by seasonal flavours. Here are two quick, fun facts about its creation.

First, I normally post recipes that I developed and photographed a while ago, such as a year or even two years ago. I made this cocktail this weekend, and I couldn’t wait to share it with you.

Second, I did not plan this recipe at all. In fact, I’ve been all about ingredients that signal the transition between late summer and early fall—apples, pears, rosehips, and figs—over the last few weeks. However, our garden lavender unexpectedly started to bloom again in mid-September. So, I couldn’t miss this opportunity and decided to come up with something that captures both seasons.

Ingredients

  • 1 medium juicy pear (about 150-170 g), finely cubed
    I used Bartlett

  • 1 1/2 tbsp. (30 g) honey

  • 1/4 tsp. dried lavender buds, finely minced

  • a squeeze of lemon

  • a pinch of cinnamon (optional)

  • a pinch of cardamom

  • Apple cider – Use crisp, tart

  • ice cubes, optional

Directions

  • Add the honey, lavender, cinnamon and cardamom (if using) to a small skillet over high medium heat. Simmer for a minute or so to thicken slightly.
  • Add the pear, drizzle with the lemon, and cook for about 5 minutes, until soft and a caramel-like sauce forms. Turn the heat off and let the sauce cool completely.
  • To make the Lavender Pear Cider Cocktail, place 1 to 2 tbsp. of the sautéed pears and some sauce into a glass. Pour the cider over the pears, add ice if desired, and serve with a spoon to enjoy the fruit at the bottom.
