That looks delicious, Ben. The colour is amazing! I usually have roasted red peppers in my freezer, so this dip would be easy to put together. When Red Peppers are on sale, I buy a bunch and roast them on the BBQ. Then, I lay them flat on a tray and freeze them before placing them in a ziplock bag for future use.
