Ingredients

  • Carrot Salad:
  • 6 cups shredded carrots (5-6 medium carrots)

  • 1/3 cup raisins

  • 1/3 cup chopped dill

  • Dressing:
  • 1 to 1 and 1/2 tsp. caraway seeds (to taste)

  • 2 tbsp. olive oil

  • 1 tbsp. honey

  • 1 tbsp. Dijon mustard

  • 1/2 to 1 tbsp. apple cider vinegar

  • salt and pepper, to taste

Directions

  • For the dressing, first lightly toast the caraway seeds onto a small pan, 2-3 minutes, until fragrant. Then slightly crush them using mortar and pestle – or simply mince with a knife.
  • In a small bowl, combine the caraway seeds with the the remaining ingredients for the dressing, whisk well. Let the mixture stand for 5 minutes to allow the flavours to meld together.)
  • In a large bowl, combine the carrots, raisins, dill, and dressing. Try and adjust the taste if necessary – you may need a touch of salt or /and black pepper.
  • You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. (It will be only better the next day.) Enjoy!
