Ingredients

  • Honey-Balsamic Onions:
  • 1 medium red onion, thinly sliced

  • 2 tbsp (30 ml) extra virgin olive oil

  • 2 tbsp (30 ml) balsamic vinegar

  • 2 tbsp (40 ml) honey

  • Juice of 1/2 lemon (about 1 tbsp / 15 ml)

  • Pinch of salt and pepper

  • Salad:
  • 3–4 small to medium sausages (about 255–340 g total)

  • 1/2 tbsp (7.5 ml) olive oil

  • 2–3 generous handfuls salad greens (about 50–80 g)

  • 1 cup (150 g) fresh blueberries

  • 2 tbsp (20 g) salted pistachios, chopped

  • 1/4 cup (30 g) goat cheese

Directions

  • Marinate the Onions
    Whisk together the olive oil, balsamic vinegar, honey, lemon juice, salt, and pepper. Add the onions and toss well. Cover and refrigerate for about 1 hour, stirring once or twice.
  • Cook the Sausages
    Heat the olive oil in a skillet. Brown the sausages for about 3 minutes. Add about 1/8 cup (30 ml) water, cover, and cook until the water evaporates. Remove the lid and continue cooking for 2–3 minutes to brown further. Cool slightly and slice.
  • Assemble the Salad and Serve
    Combine the greens, blueberries, onions, and sausage. Divide between serving plates.Sprinkle with the goat cheese and pistachios. Serve immediately.

Notes

  • Serves 2 as a main course or 4 as a side salad.
  • The onions can be marinated a day ahead. The marinated onions are also excellent on burgers and sandwiches.
  • Grilled sausage works beautifully in place of pan-cooked sausage.
