  • Always adjust to your lavender. Dried culinary lavender can vary considerably in potency depending on the variety, brand, and age.

When in doubt, start with less. You can always stir another small pinch into the ricotta after tasting it.

Still, the combination of peach, honey, and lavender makes it distinctive enough for a summer brunch. Add an extra drizzle of honey, and it can even work as a simple light dessert.

You only need a few simple ingredients to make this peach ricotta toast with honey and lavender, so their quality makes a difference.

  • Ricotta – creamy, mild ricotta provides the base for the toast. I like traditional whole-milk ricotta here, but there are several good options depending on the texture you prefer.
  • Peach – choose a ripe, fragrant peach that is juicy but still firm enough to slice neatly.

Several types of ricotta will work for this recipe, and your choice will mostly affect the texture.

  • Traditional whole-milk ricotta – my preferred all-around option. It has enough richness for a satisfying toast while retaining the characteristic delicate, slightly grainy texture of ricotta.
  • Fresh ricotta – if you can find good-quality fresh ricotta, it is an excellent choice. It tends to have a particularly delicate, milky flavour and soft texture.
  • Basket or well-drained ricotta – thicker and less watery, making it particularly useful if your peaches are exceptionally juicy.
  • Whipped ricotta – a good option if you prefer an especially light and smooth texture. You can also briefly whip regular ricotta yourself, although that extra step is not necessary here.
  • Part-skim ricotta – perfectly usable, although it generally has a less rich and creamy mouthfeel than whole-milk ricotta.

Whatever type you choose, avoid excessively watery ricotta. If yours contains a lot of whey, simply drain it briefly before spreading it over the bread.

What Bread Is Best for Ricotta Peach Toast?

You want bread that is sturdy enough to hold a generous layer of ricotta and juicy peaches, but not so dense that it overwhelms the toppings.

  • European-style white bread – my choice for this recipe. It has a pleasantly chewy texture and develops a crisp surface when toasted in a dry skillet.
  • Sourdough – a great option if you enjoy a little tang to contrast with the sweet peaches and honey.
  • Brioche – softer, richer, and slightly sweeter, making the toast feel more dessert-like.
  • Country or artisan bread – works particularly well when cut into substantial slices that can support plenty of ricotta and fruit.
  • Avoid very thin bread – it can become soggy quickly under the ricotta and juicy peaches.

Whatever you choose, I would toast it well enough to create a crisp surface while keeping some softness inside.

How to Use Lavender in Ricotta Peach Toast

Lavender should add a gentle aromatic note rather than dominate the peaches and ricotta. I used dried culinary lavender, which is convenient, easy to measure, and available year-round.

  • Always choose culinary lavender. Lavender sold for decorative, craft, or fragrance purposes may not be intended for consumption and can also have a much harsher aroma.
  • Start with a small amount. I used about ¼ teaspoon of dried culinary lavender for a subtle but noticeable flavour. For just a hint, a small pinch is enough.
  • Adjust for potency. Different varieties and brands of dried lavender can vary considerably in strength. Older lavender may also have lost some of its aroma, so taste and adjust rather than relying strictly on the measurement.
  • Rub or finely mince dried lavender. I simply rubbed the buds between my fingers before adding them. This helps release their aromatic oils while breaking up the buds so the flavour distributes more evenly through the ricotta. You can also finely mince them.
  • Fresh lavender works, too. Make sure it is culinary and untreated. Because fresh lavender generally has a softer flavour than dried, you will usually need a little more. Start with roughly twice the amount and adjust to taste.
  • Add gradually. Mix the lavender into the ricotta, taste, and add another small pinch if needed. It is much easier to increase the floral flavour than to correct an overly lavender-forward mixture.

For this particular recipe, I prefer dried lavender because the small quantity is easy to control and there is no need to prepare or source fresh flowers.

Strawberry Ricotta Toast with Lavender Variation

Peaches are my first choice for this recipe, but strawberries make an equally lovely variation. Their brighter, slightly tangier flavour works particularly well with creamy ricotta, honey, and a subtle touch of lavender.

Simply replace the peach with about 5–7 sliced strawberries and prepare the toast exactly the same way.

  • Choose ripe strawberries for the best flavour and natural sweetness.
  • Keep the lavender subtle as strawberries have a somewhat more delicate aroma than ripe peaches.
  • Adjust the honey to taste depending on how sweet your berries are.
  • Try other berries, too. Raspberries or blackberries would work nicely with the same ricotta and lavender base.

Tips for the Best Ricotta Peach Toast with Lavender

This recipe is quite forgiving, but a few simple details make a noticeable difference.

  • Taste before adding more lavender. Its potency varies, so adjust gradually rather than automatically increasing the amount.
  • Adjust the honey to the fruit. Very ripe peaches may need little or no additional honey on top, while less sweet fruit can benefit from an extra drizzle.
  • Assemble just before serving. You can prepare the ricotta mixture ahead, but the finished toast is best enjoyed promptly while the bread is still crisp.
