Hello, folks! How are you doing? I hope you are having a great week and ready for a terrific weekend! (Just two days.)

Persimmon Pomegranate Walnut Salad
Persimmons are one of my favourite winter ingredients to use as a salad ingredient. They are sweet, meaty, and delicious. And their pretty and bright orange skin will make any dish beautiful and happy. For this easy recipe, you will need just a few simple ingredients:
Persimmons – use whatever persimmons are available where you live. If possible, look for soft but firm or jelly-like flesh (e.g., Fuyu, Hachiya persimmons).
Walnuts – lightly toasted and roughly chopped. You can swap for other nuts, too. Think of hazelnuts, pecans, or almonds. You can also use pumpkin or sunflower seeds.
Pomegranate arils – you can use dried cranberries instead.
Soft goat cheese – you can swap for another cheese of your choice. Feta will be an excellent choice.
A little honey, olive oil, and lemon juice – for a light dressing.
Fresh thyme – just a little bit, for an added flavour.

I always love seeing a few photos of Daisy alongside your new recipes Ben! If I could keep my cat, Begbie, still for a few minutes, he’d be in my food photos too! Anyway, beautiful salad. Just in time for warmer weather coming up soon (hopefully)!

Thank you, Angie!
South Africa exports a lot of persimmons which we call Sharon Fruit. It is the one fruit I do not enjoy at all.
Sharon fruit is not my favourite either.
