Today, I am going to keep it short and sweet. Because who needs a long text when you can enjoy a few photos of beautiful Daisy instead, right? Plus, this delightful Persimmon Pomegranate Walnut Salad.

Persimmon Pomegranate Walnut Salad

Persimmons are one of my favourite winter ingredients to use as a salad ingredient. They are sweet, meaty, and delicious. And their pretty and bright orange skin will make any dish beautiful and happy. For this easy recipe, you will need just a few simple ingredients:

Persimmons – use whatever persimmons are available where you live. If possible, look for soft but firm or jelly-like flesh (e.g., Fuyu, Hachiya persimmons).

Walnuts – lightly toasted and roughly chopped. You can swap for other nuts, too. Think of hazelnuts, pecans, or almonds. You can also use pumpkin or sunflower seeds.

Pomegranate arils – you can use dried cranberries instead.

Soft goat cheese – you can swap for another cheese of your choice. Feta will be an excellent choice.

A little honey, olive oil, and lemon juice – for a light dressing.

Fresh thyme – just a little bit, for an added flavour.

Ingredients

  • 2 handfuls of salad leaves of your choice

  • 2 ripe persimmons, pitted and sliced

  • 1/3 cup (30 g) walnut halves, toasted and roughly chopped

  • 1/4 cup (30 g) goat cheese

  • 1/4 cup pomegranate arils

  • 1-2 thyme sprigs, leaves minced if necessary

  • 1/2 tbsp. (7.5 ml)  extra virgin olive oil

  • 1 tsp. (5 ml) honey

  • a few drizzles of lemon

Directions

  • Simply combine the salad leaves, persimmons, walnuts, pomegranate, and thyme in a bowl. Drizzle with the olive oil, honey, and lemon juice and gently mix to combine. Serve garnished with the goat cheese.
