  • 2 handfuls of salad leaves of your choice

  • 2 ripe persimmons, pitted and sliced

  • 1/3 cup (30 g) walnut halves, toasted and roughly chopped

  • 1/4 cup (30 g) goat cheese

  • 1/4 cup pomegranate arils

  • 1-2 thyme sprigs, leaves minced if necessary

  • 1/2 tbsp. (7.5 ml)  extra virgin olive oil

  • 1 tsp. (5 ml) honey

  • a few drizzles of lemon

Directions

  • Simply combine the salad leaves, persimmons, walnuts, pomegranate, and thyme in a bowl. Drizzle with the olive oil, honey, and lemon juice and gently mix to combine. Serve garnished with the goat cheese.
