Happy Birthday, Daisy!

Hello everyone. I hope you’re doing well. I will keep it short and sweet today. Why? Because it’s a very important day in our house. It’s Daisy’s birthday. Can you believe our sweet girl turned one year?

Obviously, there’s no reason for me to keep this post short and sweet, but it’s a good excuse. Despite the Big Day for us, I doubt Daisy clearly knows what’s going on. In fact, I made her a cake to celebrate and take some fun photos. To clarify, that wasn’t a cake but salmon patties layered as a cake garnished with some creamy cheese and catnip. I must admit she was more excited about the cheese, though. You can find a couple of snaps in this post, or even more in my Instagram post.

All right, let’s back to this Persimmon Pecan Cheddar Salad. As you will see, Daisy assisted me in taking pictures. However, she wasn’t impressed with the salad. She even didn’t try it. In her excuse, there wasn’t any prosciutto or chicken to be enthusiastic about. Even though she loves cheese, smoked cheddar has too strong flavour to her.

On the positive side, we truly enjoyed this dish! What not to love about this salad? It features:

  • Sweet persimmons,
  • Smoked cheddar,
  • Candied sweet and salty pecans,
  • Cranberries,
  • Peppery arugula.

Oh those candied pecans were everything! Obviously, you will not need the entire batch, but don’t you even think of making more. That’s a perfect snacking material. In fact, you might end up munching all the nuts before even the salad is ready!

Ingredients

  • Candied Pecans:
  • 1 cup pecans

  • 1 tbsp. butter

  • 2 tbsp. honey (or maple syrup)

  • a good pinch of salt and chipotle, each

  • 1/4 tsp. smoked paprika and Italian seasonings, each

  • Persimmon Pecan Cheddar Salad:
  • 2 medium or 1 large ripe persimmons, cubed or sliced (I used Fuyu variety)

  • 2 handfuls of arugula

  • ~ 1/3 cup candied pecans, roughly chopped

  • ~ 100-120 gr. smoked cheddar, cubed

  • 2 tbsp. fresh cranberries, cut in half (dried cranberries or pomegranate arils will do)

  • juice of 1 mandarin orange (tangerine, clementine, or 1/4 of orange)

Directions

  • Candied Pecans:
  • Place the pecans onto try pan and toast over medium heat, 5-7 minutes.
  • Add the butter, honey, and seasonings, and roast, occasionally stirring, for another few minutes, until well toasted. Off heat. Transfer onto a plate or board and let it cool.
  • Persimmon Pecan Cheddar Salad:
  • For the salad, simply combine the persimmons, arugula, cheddar, and cranberries in a bowl. Drizzle with the mandarin juice. When serving, sprinkle with the pecans.

Your Persimmon Pecan Cheddar Salad looks absolutely AMAZING Ben, so many delicious flavors here! I’ve never tried persimmon on a salad, and I can totally see how that would be utterly delicious. And candied pecans are always a good idea. 😋. Definitely need to try this!!

    Whoa, lucky Daisy! That is one very happy birthday cake. I love your creativity when it comes to your kitty’s birthday cake!! Very cute. I’m sure she knows that today was “special” in her own way. Your salad probably not quite as exciting to her but it sure looks good to me!

    Well happy birthday to Daisy – what a fun way to celebrate! Our pups are about to turn one year old in a week or so, and we were talking about making them something fun. So Daisy isn’t a fan of smoked cheddar? That’s ok! That means more smoked cheddar for me. Haha. I do love smoked cheddar (and indeed all cheese) so this sounds like a really fun combination in this salad. Yum!

    We celebrate our dog’s birthday, too. In fact, she gets excited when she hears us sing Happy Birthday for other family members. She thinks she’s going to get a treat! Indiana is known for their persimmons so I need to get on the bandwagon. Such a gorgeous salad.
