Hello everyone – happy weekend! Yeah, so much needed weekend. I am excited about some movie nights, a few cocktails, and hopefully some cooking (TBD because I am still not sure what I want to make and photograph). Roasted Grape Salad
Indeed, I made this Roasted Grape Salad last autumn, and I finally decided to share it. Isn’t it beautiful? I love roasting grapes for my recipes, and I used idea for Roasted Grape Bruschetta. Roasting grapes is a great way to intensify the flavours and sweetness. And if you skip the savoury ingredients, and use only some honey, a pinch of salt, and probably butter, you will get a wonderful sweet topping, for example for cakes, pancakes, or breakfast.
It really takes just around 20 minutes to roast grapes. How easy is that?
And as I’ve mentioned before, this Roasted Grape Salad is super customizable, too. If you don’t like blue cheese, use other options such as feta or goat cheese. Also, use any nuts of your choice. Almonds, pistachios, and Brazil would be a good substitution. You can add other ingredient, too. Think of slices of prosciutto or crisp bacon. Sounds delish, right?

Roasted Grape Salad

Ingredients
- Roasted Grapes:
about 2 cups seedless grapes
1 tbsp. olive oil
1/2 tsp. honey (optional)
1 tsp. fresh or 1/2 tsp. dried thyme (fresh works better)
~1/4 tsp. salt or to taste
a pinch of black pepper and chipotle powder, each
- Roasted Grape Salad:
roasted grapes
1/3 cup crumbled blue cheese
1/3 cup hazelnuts, toasted and roughly chopped
arugula, spinach or other salad of your choice
Directions
- Preheat oven at 200 degrees C. (400 degrees F).
- Place the grapes onto the baking sheet and drizzle with the oil, honey (if using), and seasonings. Roast for about 20 minutes, flipping once or twice. It could take a bit longer depending on the grapes type and thickness of their skins. Remove from oven and let cool a little bit.
- Arrange the salad greens and roasted grapes on the serving plates, drizzling with some juice released while roasting. Sprinkle with the blue cheese and hazelnuts. Enjoy!

The only time I used grape on a dish on a fruit salad and a Thai curry, never knew it can be roasted and put on a salad, such a brilliant idea. Roasting process would definitely give it some robust flavours due to the caramelisation of the sugars

Such a great combo of flavours for a fantastic salad! Roasting brings out the naturally sweetness of grapes and they pair wonderfully with blue cheese!
