Steel-Cut Oats
Steel-cut oats are the least processed option.
They offer:

However, they require significantly longer cooking times and are not ideal for this particular recipe.
How to Make Peaches and Cream Oatmeal
In a small saucepan, bring the cream, water, salt, and honey or sugar to a boil. Add the oats, along with the cardamom and cinnamon if using, and cook for about 1 minute over medium heat, stirring.
Decrease the heat, then add the cubed or sliced peach. Let the oatmeal simmer for 3–4 minutes, or until the oats are ready according to the package directions. Remove from heat, cover, and let stand for 2 minutes. Fluff with a whisk or fork and serve with extra cream, peach slices, and chopped white chocolate if desired.
How to Adjust the Texture of Oatmeal
One of the best things about oatmeal is how easy it is to customize.
For 1/2 cup (45 g) rolled oats, a good starting point is:
- 3/4 cup (180 ml) liquid for thicker oatmeal.
- 1 cup (240 ml) liquid for classic oatmeal.
- 1 1/4 cups (300 ml) liquid for softer oatmeal.
For a Chewier Texture
- Use slightly less liquid.
- Cook for a shorter time.
- Allow only a brief resting period.
Softer, Creamier Texture
- Add a little more liquid.
- Cook a few minutes longer.
- Let the oatmeal rest before serving.
In general, the longer oatmeal cooks, the softer and less chewy the oats become.

Yeah the heatwaves have been pretty brutal, especially over in Vancouver since it’s usually moderate — man, I’m with you on the watermelon front! I can have it all day, anytime. I’m with you on the watermelon, Ben! In fact, I was just telling Laura that we should get another big watermelon before watermelon season is over here. In other news, I’ve been eating peaches and cream oatmeal a couple mornings a week all summer long – delicious! However, I’ve been cheating and using the dried oatmeal packets.
