Ingredients

  • Lilac Shortbread Cookies
  • 1 1/2 cups (340 g) butter, cubed

  • 2 cups (about 50–60 g) lilac florets, firmly packed (no green parts)

  • 2 1/2 cups (300 g) cake flour

  • 1/3 cup (40 g) powdered sugar

  • 3 tbsp (25 g) corn starch (or substitute with additional flour)

  • Pinch of salt

  • Glaze:
  • 1/2 cup (60 g) powdered sugar

  • 1–2 tbsp (15–30 ml) lilac syrup

Directions

  • Infuse the butter: In a small saucepan, combine butter and lilac florets. Melt over low heat and gently simmer for 3–5 minutes, ensuring the butter does not brown. Remove from heat, cool until solidified (about 1 hour), then remelt and strain through a fine sieve. Discard solids. You should have about 1 1/4 cups (280 g) infused butter. Let cool slightly.
  • Prepare the dough: In a bowl, combine infused butter with sifted flour, corn starch, powdered sugar, and salt. Mix until a soft dough forms. The dough should be pliable and slightly soft. If too sticky, refrigerate for 20–30 minutes rather than adding excess flour.
  • Shape the cookies: Roll the dough between parchment paper to about 5–7 mm thickness. Cut into shapes and place on a parchment-lined baking sheet, leaving about 1.5 cm space between cookies. Chill while preheating the oven.
  • Bake: Preheat oven to 325°F (165°C). Bake for 12–15 minutes, keeping the cookies pale for best flavour. Let cool on the baking sheet for a few minutes, then transfer to a rack.
  • Glaze (optional): Whisk powdered sugar with lilac syrup until smooth. Adjust consistency as needed. Drizzle or spread over cooled cookies and let set for about 1 hour before serving.

Notes

  • The cooking time doesn’t include making the lilac syrup.

It’s interesting, what you had to say about incorporating the florets into the dough, because before I had gotten to that part of your post, I had already noticed that you’d done this, and I really liked it! I noticed that they’d browned, but I think that the browned ones look really nice in contrast to the purple ones you sprinked into the glaze. So yes, I don’t think I’d like the brown ones on their own, but in combination with the ones that you glazed, I think they’re gorgeous. Also, the color of that glaze = spectacular!
