I hope you are enjoying all the seasonal produce. And today I have for you something perfectly seasonal and delicious.

Crêpes with Spiced Maple Apple Sauce
This recipe is quite easy to make. First, you will need to make some Crêpes (Basic French Crêpes) or using any other your favourite recipe.
For the sautéed apples, you will need to cook apples in a combination of butter, maple syrup, and warming spices such as cinnamon, cardamom, and ginger. If you do not have or do not like maple syrup, you can use honey or even brown sugar instead. At the end, add some dark spiced rum, if desired. While this is an optional step, rum would nicely tone down the sweetness.
As always, there are many options to adjust this idea to your preferences. For example, you can swap apples for pairs as well as play with your favourite spices. You can also add some raisins or maybe even chopped nuts like walnuts to the sauce. If using nuts, I would recommend adding them at the end, so they won’t get too soggy.

These Crêpes with Spiced Maple Apple Sauce are a luscious fall dessert. Apples quickly sautéed with butter, maple syrup, warming spices, and rum scream “autumn!”
Ingredients
1/2 of the batter from Crêpes (Basic French Crêpes) or your favourite recipe; this sauce will be enough for about 8-10 crepes.
4 cooking apples (preferably tart), cored, sliced or cubed
4 tbsp. (60 gr.) butter
1/4 cup (80 ml.) maple syrup
1 tsp. cinnamon
1/2 tsp. cardamom and ginger, each
a good pinch of salt
3-4 tbsp. (45-60 ml.) black spiced rum (optional)
ice cream, whipped cream or frozen whipped cream, optional, for serving
Directions
- Make crepes as per from this recipe Crêpes (Basic French Crêpes); you will need to make 1/2 of batter as this sauce will be enough for ~8-10 crepes. You can make the entire batch and use leftover crepes for other recipes or double the amount of apple sauce.
- In a large pan combine the butter and maple syrup over medium heat. Allow it to melt and combine and simmer for about 2 minutes, to slightly thicken.
- Stir in the apples along with the spices and salt. Simmer for about 5-10 minutes, depending on the type of apples and the desired texture; they should be soft but not mushy.
- At the end, if desired, add the rum and let the alcohol evaporate for 1 minute.
