Flavour and Texture Profile

This salad is crisp and refreshing, combining the gentle anise note of fennel with citrusy sweetness from the clementines. Pomegranate adds bright pops of tartness, while toasted pecans introduce warmth and crunch. Arugula contributes a peppery lift, fresh thyme adds fragrant depth, and the light clementine-olive oil dressing keeps everything bright and clean without overwhelming the ingredients.

  1. I love this combination of flavors, Ben! I made an Ottolenghi recipe once they had several of these ingredients, but you had to cook the fennel. I love that you use it raw — I feel it has much more flavor before it’s cooked.

  2. What a creative way to use fresh fennel! This sounds like an excellent combination of flavors…and a great way to balance out all of the desserts this time of the year, too.
