Hey, folks – this is one of those soups that feels like a full meal in a bowl. It’s rich without being heavy, warming without being overpowering, and incredibly flexible depending on what you have on hand. Whether you keep it simple with chicken alone or add crispy Italian sausage for extra depth, this Chunky Sweet Potato Soup with Chicken and Sausage is pure comfort.

Why You’ll Love This Chunky Sweet Potato Soup

  • Chunky and satisfying. This soup keeps the vegetables intact for a hearty, stew-like texture rather than a smooth purée.
  • Deep, savoury flavour. Homemade chicken broth, herbs, smoked paprika, and chipotle add warmth and complexity.
  • Flexible and forgiving. Enjoy it with or without sausage, and easily adjust spice and seasoning to taste.
  • Perfect cold-weather comfort. Cozy, nourishing, and filling enough to serve as a main meal.

Flavour and Texture Profile

This soup is rustic and warming, with naturally sweet chunks of sweet potatoes balanced by savoury chicken, gentle smokiness from paprika, and a subtle heat from chipotle. Sage and thyme add an earthy, aromatic backbone, while the optional Italian sausage introduces richness and a slightly spicy bite. The broth is light yet flavourful, allowing each ingredient to shine without becoming heavy.

Ingredients You’ll Need for This Recipe

  • Chicken thighs. Bone-in, skin-on thighs create a rich, flavourful broth and tender shredded meat. The skins are removed after cooking to keep the soup balanced.
  • Italian sausage (optional). Adds richness and extra savoury depth when served on top or stirred in.
  • Sweet potatoes. These add natural sweetness and body, holding their shape beautifully for a chunky texture.
  • Carrots and onion. Classic soup vegetables that build a gently sweet, savoury base.
  • Garlic. Adds depth and warmth without overpowering the soup.
  • Herbs and spices. Bay leaves, sage, thyme, smoked paprika, and chipotle create a cozy, aromatic profile with mild heat.

How to Make Chunky Sweet Potato Soup with Chicken and Sausage

Start by making a simple chicken broth. Simmer the chicken thighs in water until the meat is tender and falling from the bone, skimming any foam from the surface. Remove the chicken, discard the skins, shred the meat, and set both the broth and chicken aside.

In a separate pot, sauté the onion and garlic in olive oil until soft and fragrant. Add the carrots and sweet potatoes, allowing them to lightly brown to develop flavour. Pour in the chicken broth, add the herbs and spices, and simmer until the sweet potatoes are nearly tender. Stir in the shredded chicken and cook just until everything is perfectly soft and well-seasoned.

If using Italian sausage, cook it separately until browned and cooked through, then slice or chop. Serve the soup hot, garnished with sausage and fresh herbs as desired.

Ingredients

  • 2-3 chicken thigs with skins (about 450-450 g)

  • 8 cups (1.9 L) water

  • 2 tbsp. (30 ml) olive oil

  • 1 onion, thinly sliced

  • 2-4 garlic cloves, minced

  • 2 medium carrots, sliced

  • 3-4 small-medium sweet potatoes (~1 1/2 to 2 lb.), peeled and cubed

  • 1-2 bay leaves

  • 1 tsp. dried sage

  • 1 tsp. fresh thyme

  • ~1/2 – 2/3 tsp. salt

  • 1 tsp. smoked paprika

  • 1/4 to 1/2 tsp. chipotle powder

  • 2-3 Italian sausages, optional

  • fresh herbs, for garnish

Directions

  • Fill a large pot with water and place chicken thighs in the pot. Bring to a boil, then reduce heat and simmer, skimming the scum, until the meat falls from the bone, about 40-45 minutes. Remove chicken, discards the skins (You can add them to your dog’s dinner bowl), and shred the meat. Set aside the broth and chicken.
  • In a different pot heat the oil over low-medium heat and cook the onions and garlic, 5-7 minutes.
  • Add the carrots and sweet potatoes and slightly brown over medium heat for about 7 minutes.
  • Add the chicken broth along with the herbs and seasonings. Cover and simmer, skimming the scum, for about 15 minutes or until the sweet potatoes are almost soft. Add in the shredded chicken, and cook for another 5 minutes or so. Try and adjust the seasonings, if necessary.
  • If desired, you can serve the soup with Italian sausage. If so, cook the sausage in a pan with some oil, until cooked through, then roughly chop / slice. Garnish as desired and serve. Enjoy!

  1. God, this soup is gorgeous. I love a chunky soup, and I also love sweet potatoes. But sausage is like an addiction for me, so I am all in on this one. Thanks!

  2. i love sweet potato! I roasted up a couple last week and added them to salads etc. Delish!

  3. Although I’ve many different kinds of soup on my blog Ben, and lots of sweet potato soup variations, I don’t have one with Italian sausage added in. What a great idea! I bet there’s bags of flavour in a bowl. Yum!

It’s almost lunch time here and my mouth is watering looking at this hearty soup! I’ll choose a chunky soup over a smooth one any day so this one is calling my name.
