Only three weeks left till the astronomical autumn!) , I am trying to make the most of all the wonderful seasonal produce while it lasts. And when you have perfectly ripe and juicy peaches, you really do not need to do much to turn them into something delicious.
This peach cucumber salad with mozzarella is a perfect example. It combines sweet peaches and crisp cucumber with toasted bread, fresh basil, olive oil, salt, and pepper. That’s basically it! There is no vinegar, lemon juice, onion, or even a conventional dressing. Instead, the flavours are clean and restrained, allowing those beautiful late-summer peaches to shine. So, let’s dive into this summer salad with peaches and cucumbers!
What Makes This Peach Cucumber Salad with Mozzarella Special?
This peach cucumber salad is loosely inspired by Mediterranean bread salads, particularly panzanella. However, it takes the idea in a lighter, fruitier direction. The combination is juicy and refreshing yet satisfying thanks to the golden toasted bread.
A Panzanella-Inspired Summer Salad
Traditional Tuscan panzanella generally combines stale bread with ripe tomatoes, onions, basil, olive oil, and vinegar. Depending on the version, you may also find cucumbers and other additions.
This summer peach salad borrows a few elements from that idea while being quite different.
- The bread. Rustic bread gives the salad substance, but instead of soaking stale bread, I toast it until nicely golden.
- Seasonal produce. Peaches and cucumber replace the usual tomato-forward combination, making the salad particularly fresh and juicy.
- Mozzarella. Torn fresh mozzarella adds a mild, creamy element that works beautifully with ripe peaches without overpowering their delicate flavour.

What Is the Best Bread for This Peach and Cucumber Salad?
A rustic loaf, sourdough, or ciabatta is ideal for this peach salad with toasted bread. Look for bread with enough structure to become crisp and golden while retaining a pleasantly chewy interior.
Unlike traditional panzanella, you do not need stale bread because we are not soaking it. Fresh bread works perfectly once toasted.
Also, avoid cutting the bread too small. Generous bite-sized pieces provide better texture and are less likely to soften too quickly once combined with the juicy peaches.
How to Make Peach Cucumber Salad with Toasted Bread and Mozzarella
This peach cucumber salad with mozzarella could hardly be easier to make. Cut the bread into bite-sized pieces, drizzle it lightly with olive oil, and toast until golden and crisp around the edges. Combine the ripe peaches and cucumber with torn mozzarella, olive oil, salt, and black pepper, then gently toss with the toasted bread and plenty of fresh basil.

- Prosciutto. A classic partner for peaches and a great option if you want to turn the salad into a more substantial meal.
- Nuts. Pistachios, walnuts, or pecans would add extra crunch and a subtle nutty flavour.
- Fresh herbs. Mint and thyme would be lovely either alongside the basil or in its place.
- Berries. A small handful of raspberries or blackberries could add another late-summer element, although I would keep the peaches dominant.
Dressing Ideas
This peach mozzarella and cucumber salad does not need a conventional dressing when made with wonderfully ripe peaches. Still, if you prefer more acidity or simply want to experiment, there are several easy options.
- Lemon and olive oil. Add a small splash of fresh lemon juice for a brighter, fresher finish.
- White balsamic. Its milder flavour works particularly well with peaches and will not dramatically alter the colour of the salad.
- Honey dressing. Combine olive oil with a little lemon juice or white balsamic and a touch of honey. This is particularly useful when your peaches are not exceptionally sweet.
- Balsamic vinegar. A small amount will give the summer bread salad a deeper, sweeter-tart character. Start sparingly so it does not overpower the peaches.
How to Store Peach Cucumber Salad
For the best flavour and texture, I recommend enjoying this peach cucumber salad right after assembling it. The cucumber will be at its crispest, while the toasted bread will retain a pleasant combination of crunchy and slightly softened pieces.
If your peaches are firm and not exceptionally juicy, you can refrigerate the assembled salad for a few hours. However, the bread will gradually absorb more moisture and become softer.
If you want to prepare the ingredients ahead, toast the bread and keep it separate from the peaches and cucumber. Then combine everything shortly before serving.
