Ingredients

  • 3-4 (about 1 lb. or 450 g) juicy, crisp, and sweet and tart apples – choose those that are good for baking, i.e. Granny Smith, Macintosh, Cortland, or Gala.

  • 2 tbsp. (30 g) butter

  • 2 tbsp. (45 g) honey

  • 1-2 tbsp. (20-40 g) molasses – I used fancy (treacle)

  • 1 tsp. cinnamon

  • 1 tsp. ginger

  • 1/4 tsp. cardamom and nutmeg each

  • a pinch of all spice, anise, and clove each

  • a pinch of salt

  • a good splash (1-2 tbsp. or 15-30 ml) of dark rum, brandy, or triple sec, optional

  • vanilla or ginger ice cream, whipped cream, crumbled gingerbread cookies, or bits of crystallized ginger – optional, for serving

Directions

  • Core and cube the apples into bite-sized chunks.
  • Add the butter, molasses, and honey to a skillet, preferably heavy-bottomed.
    Melt over low-medium heat and allow to slowly bubble for about 2 minutes.
  • Add all spices (including salt) and let the mixture simmer for 2-3 minutes. While simmering, try and add more honey, molasses, or spices to your taste.
  • Add in the apples to the pan. Slightly reduce the heat and simmer for 5-10 minutes, depending on the type of apples and the desired softness, gently stirring with a spatula occasionally. Keep in mind that once the heat if off, the apples will still keep cooking and getting softer from the residual heat – so do not overcook them.
  • If desired, stir in the alcohol and let it evaporate for 30 seconds or so.
  • If, by the time the apples are soft, the sauce is still too runny, remove the apples with a large slotted spoon then increase the heat and let the sauce bubble for 2 minutes or so, to thicken (you may add a little more honey or molasses.)
  • Serve warm apples if desired, garnished with ice cream or whipped cream, crumbled gingerbread cookies, and caramelized ginger for a stunning dessert – or use as a topping for your oatmeal, pancakes, etc. Enjoy!
