Ingredients

  • 4-5 juicy and crisp sweet and tart apples, cored then sliced or cubed – choose those that are good for baking, i.e. Granny Smith, Macintosh, Cortland, or Gala.

  • ~1/4 cup (80 ml.) or slightly more maple syrup

  • 2 tbsp. (30 gr.) butter

  • few drizzles of lemon juice

  • 1/2 tsp. cinnamon

  • a pinch of salt

  • 1/2 – 1 tsp. maple flavour (optional)

  • 1/2 cup (~60 gr.) pecan halves

Directions

  • In a skillet, preferably heavy-bottomed, lightly toast the pecans over low-medium heat, until they are fragrant, about 3-5 minutes. Remove the pecans and set aside.
  • Add the butter and maple syrup into the same skillet and melt. Stir in the cinnamon and salt. Simmer the mixture for 2-3 minutes, to thicken slightly.
  • Stir in the apples with a little of lemon juice, cover, and simmer for 5-10 minutes, depending on their type and the desired softness, gently stirring with a spatula few times. Keep in mind that once the heat if off, they will still keep cooking and getting softer from residual heat – so do not overcook them.
  • Uncover for the last 1-2 minutes and return the pecans. If using, stir in the maple flavour.
  • Turn the heat off and let the apples cool a bit. You can serve them hot, warm, or room temperature. Enjoy with a scoop of ice cream if desired.

  8. What a great way to use up apples that have seen better days. All of those warming spices are wonderful, particularly on the cold and snowy days of winter. Spring begins in April in Toronto but it’s not unheard of yo get snow! At least the early bulbs begin to pop their flowery heads out of the ground.
