Ingredients

  • 6 cups shredded carrots (~ 650 g or 5-6 medium carrots)

  • 1/4 cup (35 g) pine nuts, lightly toasted

  • 1/4 to 1/3 cup (50-65 g) raisins or cranberries

  • 1 tsp. fresh thyme oregano, parsley, or dill will also work

  • about 1/3 cup (~90 g) plain yogurt of light sour cream

  • 2 tbsp. (30 g) mayo of you choice I used low-fat

  • a pinch of salt

  • a pina pinch of black pepper

Directions

  • First toast the pine nuts. Place them in a small dry skillet over medium heat and cook for about 2–3 minutes, stirring frequently, until they become lightly golden and fragrant. Then transfer them to a plate and allow them to cool.
  • Meanwhile prepare the dressing. In a small bowl whisk together the yogurt, mayonnaise, salt, and black pepper until the mixture becomes smooth and creamy.
  • Next place the shredded carrots, raisins (or cranberries), and herbs in a medium bowl. Then pour the dressing over the salad.
  • After that toss everything gently until the carrots are evenly coated. Taste the salad and adjust the seasoning if necessary.
  • Finally sprinkle the toasted pine nuts over the salad just before serving. Although the salad can be served immediately, refrigerating it for about 30–60 minutes will allow the flavours to develop even further.

  6. January is indeed harsh, and it’s really hard to get back into the rhythm of life and work. But this carrot salad does sound delicious! Pine nuts are one of those nuts that should be used more often…I just wish they weren’t so darned expensive! Stay warm, my friend!

    • Yes, they are outrageously expensive – especially if buying at a regular grocery store or in bulk. We always get all nuts at Costco, and their ratio for price/amount is decent. Still more expensive compared to other nuts – but definitely more affordable.
