Hey folks, how are you doing? I hope you had a lovely weekend, and you are now ready to tackle this new week. Also, if you are from Canada, I hope you had a wonderful (and tasty) Thanksgiving.
I love October as it tends to offer many warm and sunny days yet fresh mornings and cool nights. Personally, I love that contrast! But I will admit that sometimes you need a little extra kick to leave your warm bed in the mornings :) (And this warming and cozy Spiced Maple Pear Oatmeal totally can be such kick.)
And I do not even mention an abundance of autumn (and late summer) fruits and vegetables such as squashes, apples, pears, parsnips, sweet potatoes, and figs.
Caramelized Walnut Fig Prosciutto Salad
I have already shared another salad with figs and walnuts – Caramelized Fig Walnut Salad. Quite similar yet quite different. The abovementioned recipe offered caramelizing walnuts together with figs in honey. This variation uses fresh figs and maple caramelized walnuts. Oh yes – plus prosciutto. Daisy approved :)
I made a simple dressing with olive oil, pomegranate molasses, balsamic vinegar, and maple syrup. But feel free to simply drizzle it with a bit of oil and balsamic vinegar.
And should I say that these caramelized walnuts are irresistibly delicious? Please make sure to make more because there is a chance none will make to the salad.

For some reason, I bought figs at the market on Sunday with no plan for them. Now I have a plan, thanks to you. I have all the other ingredients on hand, as well. Will make this tonight!

Ah, the Salad King is back! Autumn really is a great time of the year for salads with all of the yummy apples, nuts and figs. Our fig tree didn’t produce any figs this year, but it’s still growing like crazy. I think it was due to a late freeze back in the spring. I’ll have to keep this recipe idea in mind for next fall when we have so many figs that I don’t know how to eat ’em all!!
