Ingredients

  • 2 peaches, pitted and sliced (about 250–300 g prepared)

  • 1 cup (150–170 g) strawberries, hulled and cut into pieces

  • 2 cups leafy greens such as spinach, kale, arugula, or mixed greens (50–60 g)

  • 1/4 cup (10–15 g) fresh mint, chopped

  • 1 cup (140–150 g) cooked chicken, shredded (optional)

  • 1/2 cup (15–20 g) nasturtium leaves, chopped (optional)

  • 1 tbsp (15 ml) lemon or lime juice, optional

  • 1 tbsp (15 ml) olive oil, optional

Directions

  • Prepare the Salad
    Combine the peaches, strawberries, greens, mint, and optional nasturtium leaves in a large bowl. If using chicken, add it as well.
  • Dress and Serve

  1. Well your timing here is perfect, Ben! We have a whole countertop full of peaches right now, and we’ve been searching for different ways to use them. I just need to grab some strawberries! Do you think I could use blueberries in this salad instead? We’re going blueberry picking tomorrow! Also, the nasturtium leaves are different – I’ve never used those in a recipe. Thanks for sharing!
