Summer Heat
Hello everyone – happy Wednesday! I hope you are doing well surviving these summer heat waves. But it’s not hopeless as fall is coming up quite soon. I must admit though – it’s been pretty brutal summer here in Nova Scotia. In fact, it’s my 4th full summer in Nova Scotia, and I don’t recall weather like that.
Even though fall is on its way and many folks count it from Labour Day (or generally kids going back to schools), I will not surrender :) Thus, you will have no choice but enjoy summer ideas (at least) until it officially ends. Are you horrified? lol
Jokes apart, what could be better that a watermelon to survive unbearable heat (and humidity)? Well, besides ice cream, of course. I don’t think you can find a better solution. August is the month I do eat lots of watermelons. Actually, I most eat watermelons. I really mean this. We usually buy 4 or even 5 large watermelons at Costco every week. And I must specify Andrew isn’t a huge fan, so I must admit I responsible for eating most of them. And I am not continue to stop as long as they are nice and crisp (Because there’s nothing worse than watermelon flesh getting soft and mushy, right?) Hopefully, I can enjoy them at least for the next two weeks or so!
Most of the times, I eat them just as it is (or simply sprinkled with feta for a more substantial meal), but occasionally I use them for recipes.
Watermelon Feta Salad
This Watermelon Feta Salad is probably the simplest salad idea you can imagine. I think it would be fair to assume many people tried this combination at least once. You might like it, you might hate it. Personally, I am huge fan of the combination of sweet, watery melon and salty feta. I rarely add onions, but this time I wanted to use some sweet red onions. This is optional. And fresh mint. A pinch of black pepper. That’s all what you need.
Since the watermelon is already super juicy, you don’t need any dressing. However, you can drizzle with a little of good quality olive oil. A little touch of lemon or lime juice won’t hurt, either. And if you want even more sweetness, why not add some honey or even maple syrup? But this last suggestion is really for those folks who love sweet and savoury combos.

This looks good, have you tried grilling the watermelons? I did it in a similar recipe and that method brought out that sweetness from that watermelon.

Growing up, my father always put salt on his watermelon (and cantaloupe), and I thought it was the strangest thing. But I do like watermelon + feta, and feta is a pretty salty cheese. I guess I’m taking after my father after all!
