This no-bake Pistachio Panettone Trifle with mascarpone and orange is a luscious, elegant yet easy-to make dessert that will please your eyes and palate. And it’s boozy, too!

Ingredients

  • about 400 gr. mascarpone, room temperature

  • 1-2 tbsp. powdered sugar

  • about 250-300 gr. panettone of your choice (I used with dried fruit and chocolate), roughly cut or torn

  • 2/3 to 1 cup salted pistachios

  • 3-5 rings of dried (dehydrated) oranges or 1 tbsp. orange zest

  • about 1/3 cup of orange marmalade

  • about 1/3 cup of more of Irish cream (Coffee-flavoured or orange-flavoured liquors would be nice, too.)

Directions

  • Process the pistachios in a blender into the powder. Separately, grind the dried oranges, if using. Reserve about 3-4 tbsp. of ground pistachios, for garnishing. Fold in the orange powder (zest) into the marmalade.
  • Toast the panettone, on a dry pan, until lightly golden. Cool.
  • In a large bowl, using a hand mixer, beat the mascarpone 1 minute. Stir in the powdered sugar and continue beating for a minute or so until well-incorporated.
  • Roughly divide the mascarpone cream into two parts where one part is large (~ 2/3). Fold in the pistachios, except for the reserved ones) into the large portion.
  • To assemble the trifle, you can use a large trifle bowl or individual glasses. Arrange the panettone layer and drizzle with the Irish cream. Layer the pistachio cream and some marmalade. Alternate the layer as long as the glass height allows / ingredients are used up. The last layer should be plain mascarpone. Sprinkle with the reserved pistachios and if decried, extra orange powder (zest).
  • Chill for at least 1 hour or preferably longer. Enjoy!
