Ingredients

  • 3 medium pears (about 450 g), cored and cubed

  • 2 tbsp. (30 g) butter

  • 2 tbsp. (40 g) honey

  • 1 tsp. (about 1 g) fresh thyme leaves

  • 1/2 tsp. (about 0.5 g) fresh rosemary leaves, minced

  • Fine salt, to taste

  • 4–6 slices (about 75 g) prosciutto, torn

  • 100 g cooked chestnuts, crumbled or roughly chopped

  • ½ cup (about 85 g) pomegranate arils

  • few handfuls (about 40-50 g) arugula

  • olive oil, optional, for drizzle

Directions

  • Heat the butter in a wide skillet over medium heat. Add the sliced pears, honey, a pinch of salt, thyme, and rosemary. Sauté gently for 5–7 minutes, until the pears are just tender and lightly glazed, not caramelized. Remove from heat and let cool slightly.
  • Arrange the arugula on a serving platter or individual plates. Top with torn prosciutto, warm pears (with any sauce), crumbled chestnuts, and pomegranate arils. This salad is already juicy thanks for the pears, but you can always drizzle with a little olive oil. Enjoy!
