Hello everyone! Happy mid of week (I feel you, Friday.) Who is here for some delightful and exciting salad?
As I mentioned in my previous post, I am done with rose-infused ideas, and I am moving on lavender. How exciting, isn’t it? But not quite yet. This week I am sharing some salads and appetizers instead. As any other summer, I make many salads and bruschettas, but I have only shared a few of them yet. Please blame the lilac and rose season.
Summer Salad ideas
While I love sophisticated and somewhat bizarre salad combinations, this year we’ve been enjoying some simple flavours. Actually, that makes sense for my blogging goals. Why? I am not going to give up on blogging in the foreseeable future. So, if I use up all my potential for creating something unique now, what am I going to do in 10 years or so haha? (But I hope my imagination never leaves me.)

Peach Strawberry Salad
This Peach Strawberry Salad is simple in terms of flavours and textures, but it’s super tasty. Succulent peaches and refreshing strawberries make an excellent combination. I also added nasturtium leaves (which are totally edible as well as other parts of this flower). If you’ve never tried them, you definitely should. They have a nice peppery and robust kick, which reminds me a cross between arugula and water cress.
While chicken is optional, if you have any leftovers, please do add it. I didn’t cook chicken specifically for the recipe, but it’s a good addition. Mint adds freshness. Besides, some other possible additions include cheese (think of goat cheese or feta), nuts, or deli meets like prosciutto. Daisy would have approved prosciutto, but she was also fine with the chicken.
This salad is juicy enough, and it doesn’t need any dressing in my opinion. However, feel free to add a little drizzle of olive oil and citrus juice. That won’t hurt!

Well your timing here is perfect, Ben! We have a whole countertop full of peaches right now, and we’ve been searching for different ways to use them. I just need to grab some strawberries! Ben, I’ve had an idea for a strawberry salad on my “recipe ideas” list for ages. I love the fact you’ve added peach to yours. I bet that adds loads of sweetness and juiciness into the flavour overall. I’m not sure if I can get nasturtium leaves but I can definitely get rocket leaves which I could substitute instead.
