This tasty and elegant Pistachio Pomegranate Hummus is a delightful way to continue the holiday season!

Ingredients

  • 400 gr. canned chickpeas, rinsed and drained – reserve 1/3 cup aquafaba (liquid)

  • 1/2 – 2/3 cup (50-75 g) shelled salted pistachios

  • 2 garlic cloves, roughly minced

  • 1/2 tsp. ground cumin, or more to taste

  • 1/4 cup (65 g) tahini, or slightly more

  • 1/3 cup (80 g) extra virgin olive oil

  • 2 tbsp. (40 g) pomegranate molasses

  • salt, optional – if using unsalted pistachios

  • Garnish:
  • 1-2 tbsp. (15-30 ml.) extra virgin olive oil

  • 1/4 cup (25 g) pistachios

  • 1/3 cup pomegranate kernels

Directions

  • Add the chickpeas, pomegranate molasses, olive oil, tahini, garlic, and spices to a food processor and blend until smooth. Gradually add some aquafaba blending until the hummus reaches the desired consistency. Try and adjust the taste by adding more molasses, tahini, or spices. You may need to add some salt.
  • Garnish the hummus with some extra olive oil, roughly chopped pistachios, and pomegranate.

  1. We totally keep our decorations up for a while longer! We started taking down some of the decorations yesterday (New Year’s Day), but we’ll keep the tree up until this coming weekend. I know a lot of folks keep their tree up until 3 Kings Day on January 6. I personally just need a couple of extra days with the warm glow of the tree! (Even more so given that we’re heading into the coldest time of the year.)

    This hummus sounds delicious, Ben, and I’m intrigued by the pomegranate molasses there. We missed this one for New Year’s Eve, but I’m going to keep this in mind for the next time we’re hanging out with friends. Sounds delicious! Happy New Year, my friend!

  2. I probably shouldn’t admit this but I took my Christmas decorations down as soon as dinner was over on the 25th. Looking at them after Christmas is over makes me sad so I always take them down really early! As for this hummus, it sounds delicious and it would be perfect for a New Year’s party!
