Hello, folks! How are you doing? I hope you have had a great weekend, and that you will have a great week ahead.Â
I also hope you are enjoying this spring. It’s been quite nice the last couple of weeks. Yet we had nearly 10 cm of snow overnight, and it’s still going. That’s a typical spring in Nova Scotia, Canada.
Today, I am going to keep it short and simple just like this ridiculously easy recipe Bean Salami Salad.
Bean Salami Salad
We always have some canned legumes in our pantry, particularly different kinds of beans and chickpeas. They are tasty, nutritious, cheap, and so versatile. Add them to your soup, make an easy stew, or simply throw a can in a salad. Either way, you will have a tasty and hearty dish.
This salad recipe is so easy, that is almost embarrassing to categorize it as a recipe. Basically, you are going to rinse a can of beans and add them to a bowl. Then add some juicy vegetables like halved cherry tomatoes and lettuce. Next, a little salami of your choice and some fresh herbs like dill, parsley, or oregano go in. For a light dressing, simply drizzle with a little extra virgin olive oil and balsamic vinegar. Salt and pepper, if needed and voila – a tasty and filling salad is ready.
As always, you can customize any salad. Do not like or have salami? You can use cooked and cubed ham or leftover chicken. Do you want to skip the meat? Why not add some shredded cheese like mozzarella or cheddar?! Want to add more or other vegetables? No problem. Cucumbers, sweet peppers, spinach, or arugula all will be great. Options are endless.

Bean Salami Salad

This Bean Salami Salad with tomatoes, lettuce, and a light dressing is an easy and tasty salad or a side dish. And if you serve it with some crusty bread, this could easily turn into your light but satisfying meal.
Ingredients
1 can (15 oz. or 425 ml.) of beans of your choice, rinsed and drained
100 g. salami of your choice, thinly sliced
250-300 g. cherry tomatoes, halved
1/4 small head of lettuce (about 75 g.)
1 tbsp. (15 ml.) extra virgin olive oil
1 tsp. (4.5 ml.) balsamic vinegar
a few sprigs of dill or other herbs of your choice (e.g., parsley, oregano, or basil)
salt and pepper, optional as needed
Directions
- In a large-medium bowl combine the beans, salami, cherry tomatoes, lettuce, and dill. If necessary, season with some salt and pepper (i.e., keep in mind the spiciness and saltiness of the salami you are using). Drizzle with the olive oil and balsamic. Toss to coat.
- You can serve the salad right away, but I would recommend refrigerating it for several hours, to allow the beans to soak up the flavor of the dressing. And it will be only better the next day. Enjoy!
