Hello, everyone. Monday, eh? I feel you. Also, Monday in our area welcomed us with the rainy gloomy weather. Indeed, the weather forecast is not promising as it’s expected to be raining for most of the week. Grrr. A delicious fix is required!

I believe, this Apple Pear Honey Crumble fits the bill!

First of all, it’s delightful and so flavourful! Imagine the combination of apples, pears, honey, and spices like cinnamon, cardamom, and nutmeg? It’s so good. The union of all these fruit juices, honey, and spices is cozy and warming; it somehow reminded me of the flavour of baklava’s syrup. I didn’t use it myself, but I just thought that some vanilla bean seeds would be a splendid addition, too!

Next, this is about the texture. While baking, apples stay relatively firm while pears (Of course, it depends on their kind, too), combined with honey, turn into a beautiful sweet concoction! This soft and delicate fruit layer is married with the layer of pecans (Which work beautifully with fruit and honey) and finished with the buttery and crumbly (like shortbread) layer. Can you feel already all these flavours and textures going on? Insanely delicious, in my book!

Of course, you can always opt for either apples or pears if you don’t like to mix them together. Just remember that it’s always good to use a few varieties of apples and pears in baking, for the best results.

Ingredients

  • 2 medium apples, cored, optionally peeled – I prefer tart or semi-tart apples

  • 2 medium pears, cored and cubed – choose ripe but firm fruit

  • 3-4 tbsp. (60-80 g) runny honey

  • 1 tbsp. corn starch – can substitute flour

  • a pinch of cinnamon, cardamom, and nutmeg each

  • a good pinch of salt

  • 1 cup (about 100 g.) pecans, roughly chopped

  • 3/4 cup (95 g.) all-purpose flour – may need slightly more

  • 6 tbsp. (85 g) cold butter plus 1 tbsp. (15 g) more, for greasing

  • 2-3 tbsp. (25-37 g.) maple or light brown sugar

Directions

  • Preheat oven to 180 degrees C (350 degrees F). Grease a 6 inch (or a little larger) baking dish with 1 tablespoon butter.
  • Thinly slice or cube the apples and pears into 1.5 cm chunks and place them in a bowl. Add the honey and toss to coat. Sprinkle with the spices, corn starch, and salt. Stir in the pecans.
  • Spread out the filling evenly in the prepared dish. 
  • On a cutting board, chop the butter with a knife then add the sugar and flour (you can also add a pinch of salt and cinnamon) and stir with your fingers until the mixture remains crumbs. If it’s too dry, add a tablespoon butter more. If it’s a little too sticky, add a little more flour.
  • Evenly scatter the crumbs over the filling. Place the dish in the oven for about 35-45 minutes or until lightly golden and crispy.
  • Remove and let cool a little before serving. Enjoy with optional ice cream.

  2. It’s been fairly chilly and gloomy here lately, too. I guess it comes with this time of the year. Bah. But at least this time of the year brings delicious food…like this crumble! I’ve become a huge fan of adding cardamom to apple recipes lately. And the pears in this one, too? Needless to say, I’ll be making this one soon!
