And yes, I am back with another zucchini recipe. At this point in the season, our garden is still producing plenty of zucchini, so I am always looking for different ways to enjoy it.

This time, you do not even need to turn on the stove. This raw zucchini recipe combines thinly sliced zucchini with a simple mixture of olive oil, lemon, honey, and shallot. The result is fresh and light yet packed with flavour. So, let’s dive into these quick and easy marinated zucchini with basil, honey, and lemon!

What Makes This Marinated Zucchini With Basil, Honey, and Lemon Special?

There are plenty of ways to marinate zucchini. However, this version is particularly simple and fresh. Instead of vinegar and lots of seasonings, the zucchini marinade relies mostly on lemon, good olive oil, and a little honey.

Raw zucchini is excellent for marinating because of its mild flavour and naturally crisp texture. However, slicing it relatively thinly (they don’t need to be paper-thin) is important.

Next, whisk together the olive oil, lemon juice and zest, honey, salt, and black pepper. Pour the zucchini marinade over the vegetables and toss everything thoroughly.

Let the zucchini marinate for 20–30 minutes, tossing it once or twice during this time. As it sits, the zucchini will release some moisture and become softer and more pliable while still retaining a pleasant bite.

  • For more citrus flavour: Add extra lemon zest rather than significantly increasing the juice.
  • For more savoury flavour: Add another pinch of salt or a little more shallot.
  • For crisper zucchini: Keep the marinating time closer to 20 minutes.
  • For softer zucchini: Let it sit somewhat longer before serving.
  • For extra flavour: Add fresh herbs such as basil, parsley, or dill.

Keep in mind that the zucchini releases liquid as it marinates. Therefore, your quick marinated zucchini may need a little extra salt or acidity just before serving.
