Hello, folks! How are you doing? I hope you are having a great week. To my Canadian readers: I hope you had a terrific Canada Day. And for all my American readers: I hope you have a wonderful Fourth of July in a few days.

Honestly, I was considering posting another cocktail recipe. Yes, the fourth one in a row. I mean, it would not really matter anymore, because I am pretty sure my reputation has been ruined, and many people think I have a drinking problem LOL.

But then I decided to post something different for the sake of variety. But don’t worry, folks, I have so many cocktail recipes to share – so stay tuned!

White Chocolate Lavender Goat Cheese Spread

If you like sweet pairings with cheeses, then I think you will like this White Chocolate Lavender Goat Cheese Spread. Yes, it’s a rather dessert-type of spread that you can enjoy for snacking, as an appetizer, or breakfast (that’s definitely healthier than Nutella!) I think it could even work as an aperitivo with some crackers and wine.

I already have another similar recipe on the blog – Lavender Goat Cheese Spread (With Honey and Peach Jam), but this new one stands even more on the dessert side.

The addition of luscious and sweet chocolate works so well with goat cheese and offsets its earthy and tangy taste. So if you a not a big fan of goat cheese taste, this recipe can change your mind.

Ingredients You’ll Need for Lavender Goat Cheese Spread

To make this recipe, you will need only several simple ingredients.

  • Soft and creamy Goat’s cheese – you will need a 300-gram log. Be sure to remove it from the fridge in advance, as it should be room temp when mixing with melted white chocolate.
  • White chocolate – works as a sweetener and enhancer of the texture. Part is melted and stirred into the goat cheese, and another part is used for garnish.
  • Dried lavender buds – minced or rubbed with your fingers. As a rule of thumb, it’s better to add less than more, otherwise, your recipe could have a perfume, soapy aroma. Be sure to use culinary-grade lavender. You can use fresh lavender buds from your garden, but be sure it’s a variety suitable for cooking; culinary lavender tends to have a mild aroma, less perfume-forward.

Possible Additions:

  • A little vanilla extract – or even better – scraped vanilla seeds will add an extra layer of flavour and a luxurious touch.
  • Lemon (lime) zest or / and lemon juice – for added freshness.
  • A little of minced fresh mint, which goes well with lavender.
  • Honey – for added smooth consistency and extra flavour. You can cut white chocolate in half and add some honey instead.

Ingredients

  • 250 g. soft plain goat’s cheese

  • 50-70 g. white chocolate, chopped
    plus more for garnishing

  • 1 tsp. (7 g.) honey, optional

  • a small pinch (about 1/2 tsp.) dried lavender,
    minced or rubbed

Directions

  • Remove the goat cheese from the fridge at least 1 hour prior to making this recipe. It should be about room temperature when you mix it up with white chocolate.
  • Place the chopped white chocolate in a microwave-safe bowl and melt over short intervals (15-20 seconds), mixing every time in between the intervals. Considering the small amount, you may only need two intervals by 15-20 seconds. Alternatively, you can melt the chocolate in a double boiler. Once the chocolate is melted and smooth, let it cool for about 5 minutes.
  • Once the chocolate has slightly cooled, combine it with the goat cheese, honey (if using), and lavender buds that have been minced or rubbed with your fingers. Using a regular or an immersion blender (I find the latter to be more convenient for this recipe), pulse until the desired consistency, making sure to stop and scrape the bowl sides as needed.) Try and adjust the flavour by adding more lavender or honey.
  • Transfer the spread to a container and if desired, garnish with extra white chocolate and few fresh lavender blossoms. The spread will last for up to 4 days in the fridge. Enjoy!
